    Me and the little woman have been married 40 years, both raised in the country and don’t miss one of your videos. We caned deer this year and now we are going to can pork, make Lard and make chicken stew!!! We watch your videos then look at each other and say let’s do that or let’s make that 😊.     We live basically the same way yall do,with one exception,canning meat. Our New Year goal, is to get outside our comfort zone and try it,when we process our Spring meatbirds. Love your videos. Praying for your family, during these first holidays, without your Dad.

    My grandmother loved to can meat also. She would say if someone stopped by to visit you didn’t have to worry about what to serve she could just enjoy the company ❤

    Absolutely loved this video. I actually just called the slaughter house just 6 miles from my house and they have leaf lard.
    I'll buy 5 pounds for my first time rendering it.

      I made some for the first time this summer. Made the mistake of processing too much at one time. I had the burner on low, but it took a long time because of the quantity. It came out white but has a pork odor. Will use it for cooking, but not baking. The amount Meagan is doing is what I'll do next time. Best of luck!

    We love your videos! We live in a small farming community near Monroe NC. After watching your video about rendering leaf fat, we got some from a neighbor pig farmer. My wife ground the fat in our meat grinder and rendered it in the slow cooker. We got snow white lard that we are so happy with. I cooked a pot of rice tonight. I rinsed and drained the rice and fried it in lard before boiling it. The frying lard was so clean smelling and the rice came out perfect. Thanks so much for educating us on the old ways.

    I love using my crockpot for rendering lard . It's nice cause you don't have to stir it just keeps it at the perfect temperature without direct heat and the cracklings turn out great too

    All my grandparents, great aunts etc fried up tenderloin & canned it in some grease. To heat up they'd just open a jar & put it in a small pot of water to heat up, right in the jar, fresh biscuits & eggs & breakfast was done. Yummy

    I love your way of thinking about not using the grinder! I render beef fat and have thought about grinding it but your comments about cleaning a greasy grinder made perfect sense!!! Love your show and eagerly wait new ones!!

    That was intereting. My relatives used to do that same thing many years ago, but I was so young i wasn't able to understand exactly what was happening. That chicken stew looks so delicious I could eat the whole pot. I enjoy watching. Thank you Megan.

    You are basically making chicken and dumplins, without the dumplins. That's the way I make chicken and dumplins, except the thickener you made. The flour on the dumplins thickens the broth and chicken mixture, when making chicken and dumplins. Love your videos. Now I have to make some...Yum.

    You can also melt down the fat in a crockpot..works great.. that's how I mostly do my lard... Great channel..

    Made chicken and dumplings the other day. My kids love them so much there is never any left when we leave the table. The dumplings are their favorite. 12 grandkids and 6 grown kids , they can put it away.😮

    I have canned pork, but it is one thing I haven't used much except to make bbq sandwiches out of it. For pork tacos do you just warm it up in your cast iron skillet with taco seasoning and that's it? I really need to try it. In my freezer I cut the fat off the pork butt or shoulder I got at the store and I plan to make lard from that. I know it isn't as good as what you are using, but I figured it was a way to use most of what I had gotten.

      Pork stew is really yummy. Just cook your potatoes, carrots, onions, peas, and squash (if you like) in a little water before adding the canned meat with its broth. Let simmer for a bit. I use garlic, onion powder, thyme, s/p and a little flour slurry to thicken if it needs it. You could add some chicken broth if you like more of a gravy in your stew.

    ❤Hello precious lady. Totally love watching you in the kitchen. Something in your alls videos almost always takes my memories back to happier times…like hearing your pressure cooker brought a clear visual of Mama in her kitchen. She pressured a lot. Also she dearly loved tenderloin biscuits. I’m not sure where they came from but once in awhile she would have some cracklings and she would make Crackling bread. The only canned meat I guess I’ve ever eaten was canned sausage and the dried beef that comes in little jars in the grocery stores. We had creamed chipped beef over toast once in awhile. This time of year always makes me nostalgic. It should be one of the most joyous seasons yet there’s always a sense of sadness that always seem to follow it. We need to get back to what Christmas is all about and lighten up on some of this commercialism. It’s just gotten so out of hand. You, Andy and your family have the right idea.     This was so good and full of information. I use lard or butter or olive oil for everything. I buy large tubs of pure lard at the Amish store, but, it would be nice to make my own.

    Daddy used to eat his chicken stew over some light bread like that. I had some for supper tonight. I love chicken stew anytime and I bet yours from those home grown chickens is really good.     Proud of you you got three things going that’s great you are a good one you got beautiful family I never made lard I have canned tenderloin it’s delicious boiled corn corn bread mashed potato maybe slaw but makes great supper after working 12 hours it’s good I love you all those children are so sweet I love the puppy too but you all know what you’re doing just be alert that hot 🥵 love prayers ❤🐖God bless you best 🐶

    Lard is much more healthy than vegetable and other unsaturated & saturated oils.
    Hot cracklings right out of the kettle over the fire are delicious too. Talk about crackling cornbread...yum yum...haute cuisine :.

    Stew looks good. I make mine a little bit different by adding carrots potatoes onion celery and season with poultry seasoning. Eat with biscuits. Would love to try yours it looks yummy. God bless 😊

    I haven’t ever saw children stew made with thickening and milk. Here where we live that looks more like our chicken and dumplings without the dumplings. I’m sure it would be good though. Just different than what we are used to. Lots of good progress in the kitchen to!

    we always used all the fat we could get from hog and make lard. we never serperate any fat it was done as one fat. I never knew there was a difference. thanks for sharing that.

    Enjoyed your video Megan. You worked hard and I took my relaxing time to watch you. I grew up in Walnut Cove so my Mama did some of the things you do. The difference is I think she fried or baked chunk tenderloin. And then canned it. When she took the tenderloin out of the jar, she would put it on a baking sheet and bake it. The edges would get crispy and the chunks of tenderlloin were wonderful. That was one of our favorite foods growing up. She would also fry sausage and then can it. It was so good too. Megan - have you ever heard of doing tenderloin or sausage like that? Ask some of your older relatives.

    I am 77 years old and have been too nervous to can meat but you made that look really simple. I liked the idea of using chicken thighs for your stew. This past week I baked a whole chicken….after we had a meal and few sandwiches I made chicken soup with carrots, celery, onions and noodles.

I’m 75 years old from farmland Illinois. Maybe if my dad had not been in the Marines, I would be living on a farm too.     Not sure if you filmed this before or after your last video, but glad your cold seems better in this one if this was after! :) I havent made lard in awhile. This inspires me to do it! We have some local places I can get it and also places that sell the leaf fat. Going to call around and check the prices. I canned chicken and sausage for the first time this year. The chicken turned out amazing and so convenient to use in everything to make recipes faster. Sausage is quick and easy to heat and serve! I'll have to try pork now too!

    Meghan, I just love you... I love your accent, I could listen to you talk all day, and I love your videos they are so informative. Im 61, only been canning for a few yrs. but I'm learnig and lovin it. I have 58 chickens right now, in my book theres no such thing as too many😂. I really want to raise a flock of meat birds to process myself, at least once. I so enjoy homesteading and Im learning so much from you, uou have such a sweet, kind way of sharing your knowledge with the world..., which by the way just blows me away how much you know being sk young. You're truly a sight for sore eyes, would love to see more young ladies living this good lifestyle. I certsinly love it, wish I had started many years ago tho.     I was afraid to can meat when I first started canning. Now, I think it is the easiest thing to can and I have done most meats. Haven't done fish yet.

    You can melt a little of that lard in the jar and keep the water out. Sometimes it takes a long time to get rid of all those water bubbles. Great content.

    Meagan back when we were young and had pigs we done the process just like you all do the old fashion way.i still cook with lard today but I buy it in the store in the 4 pound buckets which lasts me and my husband about three months or longer.i do use Conola oil too.i just love your alls ❤️❤️❤️channel makes me happy to see a new video.

    I do my lard in the crock pot. It works wonderful
