I was in Ecuador last week in Guayaquil, had tigrillo for breakfast several times and LOVED it. I've bought all the ingredients and am making this for breakfast tomorrow, can't wait 😊

Loved this when I was in Ecuador. Canadian though. No green plantains here. Just yellow. Young yellow ones that are not too black, can they be used?

Regarding your question: the plantains that you are talking about are bananas or are you sure they are from the plantains family? I definitely would recommend green plantains but you can use yellow plantains but try to find the ones that have still some green on it, otherwise it would taste sweeter. Just one more tip (if you do it with very yellow plantain, try to don’t cook it too much with water, just maybe 3 minutes)

@@Nothinghere1995 I live in England, here I find green. platoon in Amazon, you might want to give it a try, or maybe in ethnic shops from Africa or Latin America. Love tigrillo.
Yellow ripe plantains (Maduro in Spanish) work with this recipe just know it will be more mushy, sweet, and texture wise be a little different

Hi there! No, no young bananas, it’s green plantain (which is family of the bananas) but it’s harder and doesn’t taste sweet at all 😊
