I have a pressure cooker so I know what to expect but for some reason I just couldn't get the canner out of the box. Thank you for showing your dial threw this process. No ware in the manual did it say during count down air dose vent during air tight. I had to call nesco to confirm this was how it worked. Most utube videos dont show this. Thank you 😊
I absolutely love my Carey Smart Electric Pressure Canner. It is the exact same machine as your Nesco. Nesco bought Carey a few years ago and makes the same machine under both names. Our youngest daughter, Hannah, has asked for one for her next birthday. She will be 21 at the end of July.
Yes... this is a great beginner canner. Really is easy, but you just can't can as many at one time like a stove top canner. I'm a wimp when it comes to canning, but I can do this one myself. 😊

Best video for using the exhaust and airtight valve. I had mine on the exhaust dot which releases no pressure. It should read in the instructions exhaust is between the exhaust arrow and airtight. Then flip airtight to align exactly with the dot on the lid.
Just wondering, at 3:51 did you add hot water to the pot since you had added boiling water to the jars of carrots? I’m new at this and after watching so many utubes I thought hot water went with hot jars and cold water with cold jars. Thanks for clarifying.
just seeing this video now you've left out some very important food safety standards such as check your altitude level for your area and apply the appropriate weights the nesco comes with

Make sure and read your manual. and yes, you do not fully cover jars with water like water bath canning. But again read your manual ....let me know if still unclear. I think you will really like this canner.

Well, there are pros and cons to both. We have the Nesco and then our Presto 23 quart stovetop pressure canner. I'm still not confident with the stovetop by myself lol ( im a wimp), BUT I can do the Nesco by myself. The stovetop one you can do more at one time than the Nesco. But yes I recommend both of them. Wright Family Homestead has 2 Nesco canners and cans everything in them.
So just hot tap water or boiling water to canner? Super newbie here. So far 4 pints of beans but one broke inside canner. Did 4 qts of potatoes, only one didn’t seal. So excited with my nesco
Hot tap water is good with your hot jars. Keep inspecting your jars for cracks or chips before you start canning, and don't forget to wipe the rims. Great job! Thanks for watching.
It will all depend on the type of food, the size of jars, and the way it is packed. Look up in the Ball canning book or online, and you should find the correct amount.
😊 I just got my nesco and am learning to pressure can with it and your videos are VERY helpful.👍🏻I am still confused about the ‘LOW’ pressure canning setting..😕 I have read in manual and then been told by numerous people that the LOW button is used to water bath jars (quarts)that i can not cover with water it operates just like the high setting and that it is a low pressure canning setting, STEAM BATH , for pressure canning to can jams jellies and pickles in pints and qts using much less water… Can i use the LOW pressure setting and less water to can pickles, jams and jellies in PINTS & QTS?? So I have never used the low setting, but here is the info from Nesco...also I am leaving a link to a video I did ...jams. It is important in water bath canning that the jars be covered with water. If your jars are too tall, you should use the LOW-pressure setting. This allows the use of much less water and gives you more flexibility on the types of jars that can be used. It is recommended to use WIDE MOUTH canning jars, designed for use in canning, to fit within the canner when the top is closed. NOTE: QUART size jars cannot be used with the Water Bath function. I see where the USDA has only approved one model of Nesco Canners but not subsequent models or any other brand. Are you using that approved model? It's making it a bit confusing, but I get that the USDA with it's minimal staffing from what they used to have, can't keep testing model after model of electric canners.
@@ASimpleLifewithChrisTara Thank you, was checking the net, the USDA actually has NEVER approved an electric pressure canner but did provide recipes for the temperatures they reportedly produced. An extension office at a high elevation did 3 testings on multiple electric canners with inconsistent results. RoseRed is testing with home equipment at an altitude not suggested by the USDA for pressure testing. I'm sticking with my stove top canner!!!!!
I don't hold great stock in USDA....only what we know and have experience with. This works for our family along with our PRESTO 23 quart canner and out stove top water bath canner. So please do what is best for yours 👍
I just started my first load today and already I made a mistake! I was planning to do navy beans in pints but I did them in quarts. I had the canner already to start the canning cycle when I noticed that my time was only 75 minutes! They cycle had already gone to the airtight function. So I stopped the canner by unplugging it. NOW WHAT?? Do I let it cool down and start over??
I have a ninja foodie and a power pressure proXL. Both seal up when they get to pressure. It might be worth looking into to make sure your unit is functioning the way it was designed.

Yes, you can can food for more than 90 minutes with a NESCO Smart Canner The black exhaust weight on a NESCO Smart Canner is used for altitudes below 1,000 feet above sea level, while the green exhaust weight is used for higher altitudes. And as for how long...hopefully a long time. Love mine. Hope this helps...and make sure and READ your manual FIRST.

What process did you use to can them? When we canned our beans, one batch was more mushy than the other. But they still end up softer than we like compared to when we just cook them. But it is nice to know we can open and heat and be done lol
Do not buy the Nesco Canner. First the instruction leave a lot out. I bought the Nesco Canner after watching Rose Red Homestead demonstrate it actually met the USDA canning guidelines. However there is no way to tell if it actually reaches pressure or if timer counts down appropriately. After suspecting a problem I contacted Nesco who had me do a water test and according to them the canner was faulty. They required me to cut the cord and show proof f purchase in order to replace machine. They however did nothing about the hundreds of dollars of food that had to be discarded and they did not want me to send machine back to them so that they could determine what the issue was or if he issue was related to a factory run. Had I used my Presto, I would have food properly processed with methods to check process throughout. I don’t trust this machine and will not be using it in the future. I contacted Rose Red Homestead with not comment from them.

Actually you can pressure cook in this . Its also a slow cooker and water bath canner.

Peeling carrots before canning results in the best flavor. Unpeeled carrots take on a strong flavor that can be unsavory to some.

Why did your canner seem to vent in the air tight position?
It's all normal. Just how it is, I guess.

My pinto beans came out so mushy.
