i laughed hard when she said never ever use chicken to prepare this soup...here in china, beef is pretty expensive so whenever i prepare it, i use chicken~old layer~ to be precise and it tastes just as good as it used to when i was in Nigeria..beef na once once tins.. experiment and experience matters too this soup looks really delicious
If you stay in Asian countries. You will understand better. With chicken all Nigerian soup tastes as good as back home. Especially with old layers hard chicken.

This is how to cook good bitter leaf soup. Your youtube on bitter leaf soup is the best I have seen. You can also use corn flour and corn starch make it as if you are doing semo. Use it as thicklng and it appears as if you use Coco yam. Bitter leaf is Igbo soup mainly from Anambra state. I started cooking bitter leaf soup when I was 10 years old.

That was a great video. To be honest with you guys, there was a saying that one man's food could be another man's poison. Also, our taste buds varied when we taste stuff. What you like, your kids might not like it. E.TC. Why I said this was the arguement of type of meat to use or not. The old fashion way of bitter leaf soup with type of meat was what mrs. Flo used. But to be honest guys, you can use chicken, and Turkey meat to cook. I promised you, it will come out great cos I am a good cook and I used them to prepare my bitter leaf soup. But for the onion?? Not true. Beef and the other combinations she mentioned are first grade. Every other thing is sevond grade. Onugbu soup isn't particularly elastic with modifications

Yes, you can. When it's well cooked. Put the cocoyam in a blender, add a little water, and blend it till it's the consistency you want. You can use Oats as well.

Vicky please remind me exactly where you live in Europe. All these ingredients are available in the major cities of Europe where lots of Africans and South Americans live. Cod, cocoyam. Ogiri will be a hard one to find because it is very traditional. I have successfully used Quaker Oats as alternative to cocoyam in this soup. Don’t mind her, pls feel free to use onions , curry, thyme whatever you use to normally cook or boil your meat. You can even add giant African snails or periwinkles/ shell fish , or prawns , infact whatever rocks ur tastebuds. There is no hard and fast rule as per its preparation, the most essential thing is the bitter leaf and of course no tomatoes or bell peppers.
I am American that had married Nigerian Igbo. His mom cooks us soup and stew to freeze but I would like to learn so that I can pass the culture to our daughter. My mother inlaw and I are never available at the same time for me to learn from her so maybe this will help me start and then she can give me corrections! If any! Thanks

Yes, my grandmother makes cocoyam fufu. She mixes it with unripe plantains, pounds everything together in a mortar.

Ogiri is a core ingredient for ofe onugbu. You may give the soup a go without it and see how it pans out.
Ogiri does not give the taste as such it gives to nose, in soup it tastes great.
Waited for your response,nothing so i went ahead and cooked it yesterday with Ofor.

You can find palm oil at City Market. The one in parklands. Plus a lot of other Nigerian foods. Ask for a lady called Felicity 😁
