      Rebecca Ayers well done for always getting it right. ❤ I am hopeful that with time, Nigerian food ingredients will become more available everywhere there are even a few Nigerians. I say this because about 10 years ago we could not buy a single Nigerian ingredient here but today, even regular supermarkets stock some of them. Keep it up preparing these.

    I am so glad stumbling into your channel and subscribing. I cooked this soup for the first time today with your help and it's so sweet. My husband couldn't believe it's my first time indeed. When I told him I would make bitter leaf soup,he was laughing but it turned out great. We've been licking the soup since last night. Thank you so much.

    i laughed hard when she said never ever use chicken to prepare this soup...here in china, beef is pretty expensive so whenever i prepare it, i use chicken~old layer~ to be precise and it tastes just as good as it used to when i was in Nigeria..beef na once once tins..
    experiment and experience matters too
    this soup looks really delicious

      If you stay in Asian countries. You will understand better. With chicken all Nigerian soup tastes as good as back home. Especially with old layers hard chicken.

    This is how to cook good bitter leaf soup. Your youtube on bitter leaf soup is the best I have seen. You can also use corn flour and corn starch make it as if you are doing semo. Use it as thicklng and it appears as if you use Coco yam. Bitter leaf is Igbo soup mainly from Anambra state. I started cooking bitter leaf soup when I was 10 years old.

I have bitter leaf in my compound but always buy from the market anytime I want to prepare Anambra long bitter leaf because I like it so much but didn't know how to wash it without it coming out in pieces.     Is coco yam used for FuFu? I'm in love with Nigerian dishes by the way! I recently made puff puff (2x), we love it!! I want to make egusi soup next! ❤️

      Yes, my grandmother makes cocoyam fufu. She mixes it with unripe plantains, pounds everything together in a mortar.

    That was a great video. To be honest with you guys, there was a saying that one man's food could be another man's poison. Also, our taste buds varied when we taste stuff. What you like, your kids might not like it. E.TC. Why I said this was the arguement of type of meat to use or not. The old fashion way of bitter leaf soup with type of meat was what mrs. Flo used. But to be honest guys, you can use chicken, and Turkey meat to cook. I promised you, it will come out great cos I am a good cook and I used them to prepare my bitter leaf soup. But for the onion?? Capital No to my bitter leaf soup. Thanks.

      Not true. Beef and the other combinations she mentioned are first grade. Every other thing is sevond grade. Onugbu soup isn't particularly elastic with modifications

      Meat(beef)always tastes better in Nigerian soups than chicken and turkey. I have tried all so I can say but like you said our taste buds are different. I understand where aunty flo is coming from when she said that.

      Ogiri is a core ingredient for ofe onugbu. You may give the soup a go without it and see how it pans out.

    I totally disagreed with not to use chicken or Turkey. It still takes great and being nwafo igbo from Anambra, I know that using onions is a matter of preference. It taste great too. The soup I know that onion is a no no are nsala and ora soups. And putting palm oil towards the end of your cooking? I don't get that oh (in my Nigerian accent)

      Yes, you can. When it's well cooked. Put the cocoyam in a blender, add a little water, and blend it till it's the consistency you want. You can use Oats as well.

    I vote for more ingredients available in Europe ! no cud , no cocoyam , no this , no that , even had to spell the names of the products ! OMFoodnes :) too bad but i'll make this one day ;)) , looks delicious !

      Vicky please remind me exactly where you live in Europe. All these ingredients are available in the major cities of Europe where lots of Africans and South Americans live. Cod, cocoyam. Ogiri will be a hard one to find because it is very traditional. I have successfully used Quaker Oats as alternative to cocoyam in this soup.       For bitterleaf, you will mostly find dry ones outside Nigeria. I soften it first using this process before adding it to the soup: ua-cam.com/video/ikSdTPbXncU/v-deo.html

    Very nice as usual ma!!! Pls, may I know why we mustn't use onions to par boil the meat? Biko, it's confusing ma!

      Don’t mind her, pls feel free to use onions , curry, thyme whatever you use to normally cook or boil your meat. You can even add giant African snails or periwinkles/ shell fish , or prawns , infact whatever rocks ur tastebuds. There is no hard and fast rule as per its preparation, the most essential thing is the bitter leaf and of course no tomatoes or bell peppers.

    I am American that had married Nigerian Igbo. His mom cooks us soup and stew to freeze but I would like to learn so that I can pass the culture to our daughter. My mother inlaw and I are never available at the same time for me to learn from her so maybe this will help me start and then she can give me corrections! If any! Thanks

      Marwan Kay no we use only palm oil in cooking soup

      You can find palm oil at City Market. The one in parklands. Plus a lot of other Nigerian foods. Ask for a lady called Felicity 😁
