I highly recommend this pasta I grew up with. It’s not online. It’s just swirly Rotini pasta with chicken, sweet corn, and thickened cream or heavy cream whichever is in Italy. Cook it all on the stove. Then add Parmesan when you serve it. So so delicious. 10/10 every time. Optional: add chick stock cube

Thanks for the recipe and also thanks for promoting Dandelions, since it’s not the most used green and only considered a weed :3 I use them in cooking myself… I use the leaves in salads, and the flowers are usually mixed with sugar creating a infused syrup, but today I started something I have wanted to try for years namely Dandelion wine.

Dandelions are so good and tasty and very good for you. A long time ago at one point I had my freezer filled with those greens . We picked those in the country then and were not sprayed. Full of vitamins and minerals and much more.

If you grew up Italian American, you would’ve grown up picking dandelion from the off-ramps on the side of the highway 😂😂😂. If you’re a nonna or zia, this is best done with your apron on outside and your stockings rolled down to your ankles.

Dandelion greens are NOT chicory/cicoria! Dandelion greens are Dente di Leone or Dente di Cane, and are actually the leaves of the dandelion plant that we all love to dig out of our lawns! Cicoria is a smaller-leaved plant with a central stem, similar to dandelion, but has a light blue flower - the buds of the flower are often harvested by Italians, along with the tender greens in early spring, battered and fried, like zucchini flowers, but are small buds. The leaves are bitter, and cooked in the same manner as shown, but are shorter. My dad always foraged for cicoria in the spring, and it was a good tonic for us...I've never seen cicoria for sale in the markets, but dandelion greens are.

Here in Canada, almost everywhere, dandelions are treated like weed. So they are all vaporized with chemicals during the springtime. We can't eat them it can be dangerous. I had never seen them in different market places during summer times. So I can't try this at home. If someone know a place in the area of Montreal where we can find dandelions, please tell me.
