- Mhmmm today we have Justine's venison stew to enjoy with this delicious cheesy toast! Thank you to our friends Anna & Ethan for kindly giving us today's cut of meat. This toast was so popular in the United States that I've since found it in multiple cookbooks published between 1814-1858. Let's see if Ron likes it. Deer is really good. Being raised on a farm we used the entire animal. Bone broth from wild game is fantastic. My fav is elk though. For those who say they've had gamy tasting wild game. It's usually caused by not aging the meat properly. Hence getting your meat during the cold months. Easier to prepare cold. Aging. In the pre modern age. It was long term storage without to much salt. That crunchy bread sounded great. I'm a cheese guy. Just about everything but limbereger cheese. Nice chew. Good chat. It’s all looks so delicious especially cooked on an open fire. I think I will miss the small cabin when you move too your new home as this is so nostalgic this little cabin and so like the old places back in the day.
I have a degree in art history and can tell you that the pointy headed, self-proclaimed "elites" in the art world hate folk art, but folk art is one of the best preserves of history and culture ever. It is wonderful and better than 95% of the junk that has come out of modernism and post-modernism and todays retrograde movements.

Deer stew?! That sounds so good, especially with cheesy toast! I have a family friend who lives in Virginia that gives us venison meat every year and it's DELICIOUS! We got some from him just recently and we should definitely try making this stew!
Venison stew is delicious, if one knows how to prepare wild game.
Just make sure that person who hunts has them checked for CWD prions .. from another Virginian.✌️

I was raised on venison! Mom floured it and fried in lard. After frying it she would drain the lard and make gravy and put the meat back and cooked it until it was tender!!!! I loved this so much and miss eating it! I'm 67 years old and don't cook anymore!!!! Keep the videos coming!!!! 🥰
Venison stew not only looks delicious but it has beautiful colors with the cut up vegetables in it. Yummy!
The cheesy toast sounds like Welsh rarebit. I believe a British dish. But maybe that's a good place to start to try to pinpoint the origin
Carrots are really easy to grow around here. I let mine flower, and had them popping up everywhere, including my yard, brick walkway, and gravel driveway. Very tasty though even with no care.
My Grandmother made the toast. She used Dry Mustard powder, not mustard condiment. And raw egg yokes, not boiled. It was also the base for the famous recipe of Welsh Rarebit. Adding Dry mustard powder to cheese is very common to enhance the taste. Thank you for sharing!
You both should come to Michigan and spend the day at Henry Ford Historical Village, it’s huge and it’s basically an entire town with steam train etc. it takes an entire day or two to get thru it all. It’s fantastic! There are people working the stores and farms etc in period clothing etc.

My grandma was born in 1904, passed in 1978. I remember her using receipt instead of recipe. She always kept her bacon grease and I remember using a little soap cage to swich in the dish pan. She used her bacon grease to make small batches of soap!! I can still remember that smell, but it got the dishes clean! Syew looks delicious and bread sounds amazing!

I did Historic reenactment cooking at our mission which is also a state park. I admire Justine’s hearth cooking. I am grateful that our cooking was always done standing up which was a blessing for my old back.
Venison is our favorite meat! Unfortunately my husband didn't get one last year. I will have to try this recipe and the cheesy toast.

My neighbor gave me a loin of venison once. I slow cooked it with red wine. Best dinner I’ve ever made.

Most deer I’ve eaten has been gamey but I would love to taste Justine’s deer stew.
Hot chocolate back then was like warm Olvatine in the 70’s. 😅
A secret from the north woods of Minnesota, add 1/2 cup of red cooking wine. Slow cook and the wine will tame down the gamey taste.

My Mom always made our hot chocolate with Hershey's chocolate powder, milk and sugar with marshmallows on top. So very good. I wish she could make it for us again. 😥❤️😇
I'm almost 52, and have eaten venison my whole life. I've never had gamey tasting venison. I've heard it's in where it's shot on the body, how it's cleaned, and cooked as well. I love it! 😋😋😋

The stew looks delicious. I think what threw me off about the toast was the hard boiled egg. Otherwise, I think it would be great especially with Justine’s delicious looking bread. Always wising you the best of luck going forward with your new home.

Deer is really good I have ate it most of my life. Wild Turkey is good if you cook it right. Your meal looks delicious Justine you did great Some people don't know how to cook the deer so it won't be gamey

The game taste is also affected by what the animal is eating in each state. Venison in Wyoming tends to be a bit gamy

I have a collection of "recipes" from both my grandmothers from France. There's no amount whatsoever. You had to have been there to remember what they had done.Truly receipts and not recipes. I can replicate most of them because I used to hang out in the kitchen with either one of them. My chocolate mousse is just like my grandmother's from Alsace/Lorraine, so is my quiche, so are my spaetzels, so are my apple fritters, and so on. All I need are the lists, and it works! Unfortunately, you, Justine, couldn't be there in the 18th century: way to go!

The best deer meat is canned in a pressure canner. It is delicious!!!!
Didn't used to be as many deer around "back in the day". My dad used to hunt in the eastern Ozarks foothills or across the river in Kentucky. But even in the flatlands they're getting thick. I live in the STL suburbs. I can go out in my front yard and punch out about a dozen Bambis. No rifle needed. And I agree with Ron. The extra crispy fat on the edges of the pork steak, sizzling right off the grill, is a real treat.

It also helps to take the meat off the bone. I've had deer that tasted pretty much like beef. My favorite breakfast as a kid was hot chocolate(the kind that was cooked in a sauce pan with milk) and buttered toast. My Grandma made this for me many times and on my 60th birthday, my wife made it for me! :)

In German, a recipe is a “Rezept” which is also the word for a prescription or instruction in a very general sense. A “receipt” is a “Quittung,” so a slip that says how much you have paid only.

Welsh Rarebit is in early cookbooks and it is a bit different, but that’s what it reminded me of, too.
Yes! Bread, cheese and potatoes! Unfortunately, due to high blood sugar I have had to give up bread, sugar, potatoes and white rice to name a few! My husband is a hunter and I have made stew like you did here MANY times! Also venison and/or elk chili! Love the update on the home you are building! So inspirational!
Ron should try some beef suet cooked crisp in the oven. Bacon will seem second rate in comparison. :)

It all depends on what the deer eat
So if the eat in a corn field it will taste better than if it is in a forest & can just eat what they can forage
Where did you get the venison? Did Ron hunt the deer? I used to live in the country & we ate venison all the time😊
A classic mix in that stew so it has to be good. I may try this. Though I do not have an 18th century hearth, I can make a fire in the back yard and use my cast iron. Yum! I think I can smell it thru the screen. I also noticed that only kitty's blue collar is the only thing not period in your cabin ;-) LOL.
If the deer is taken during rut the taste is very strong
