“What makes a very good wine complement the food is pretty simple as well. You need to look at the acidity; you need to look at the structure of the wine; you have to look at the tannins, and ask whether it really pairs well with the flavours in the dish and whether there is acidity or is it quite spicy, and all that stuff. So you need to get the balance, which can actually make them marry each other, both the food and wine.”
