That was an excellent demonstration video well done. I was just wondering did you have any consideration to where the wastewater was draining to when you were cleaning the filters. It looked like to me it was going down the rain drain manhole that was in the yard. Is that not a legal as more than likely those rain drains are running to a local river.

Congratulations for the video! I wonder why do not you put some chemical to facilitate the removal of fat first before shaving with the spatula ? The dirt would come no more easily with the spatula after application of the product? And then throw water over chemical to finish cleaning. Thanks,

There is a very good answer to this... Small businesses save money for growth with good help. Elbow grease can literally mean thousands of dollars... Just a thought.

Clean & Gleam have cleaned the kitchen extraction systems in our restaurants every six months for the last 3 years. They are flexible with their hours, always do an excellent job & give us the certification & photographic report we need for our landlord & insurance. Recently they've also done our deep hygiene cleaning in the kitchen & for the equipment too. We would recommend them to any restaurant & wouldn't use anyone else. Excellent service at a reasonable price. Star Buffet Group

cleaning the hood canopy, ducts, and baffles is best done once a week. there is no reason to wait and use all those chemicals washed into the environment when good old fashioned elbow grease can get the job done. i use this philosophy: “Keep it clean to keep it clean”. sounds stupid until you are simply wiping away a minor grease and carbon buildup and it lengthens the life of equipment.

If you had a 4000 psi pressure washer @ 4GPM you wouldn't have to scrape very much... just the areas that are really caked on with grease. If you get one make sure you get one with a Honda 390 motor. Not those shitty Vanguard or Kohler motors.

the kitchen manager should be fired for letting it get this dirty (or the owner should sell the place). looks like he never took the filters out to clean, which would have drastically cut down on the amount of grease you guys had to scrape off.
