I have never canned onions. It sounds like a great idea. We do often freeze chopped onions and they are very handy. I am a big cryer(?) when peeling and chopping onions, so thankfully my husband does that part. Years ago when my daughter was fifteen years old she wanted to get a job to earn some money. A friend of mine owned a carnival with the food wagons, so she hired Stacey and told me I could help out. I went with Stacey to the corn dog stand the first morning and our first job was - CHOPPING ONIONS - two ten pound bags of onions. Nightmare! She never complained once. I didn't complain out loud, but my internal voice was definitely talking. lol
Oh no! I would've been doing a lot of complaining on the inside too!
The vidalia onion chopper is a godsend!!! You can often get one at the thrift store but they are so worth it even if you have to buy it new. The girls could even help if you have one.
I will have to keep an eye out!

You can sterilize your jars right in your water bath canner while you are preparing the food for the recipe. Just take them out and let them dry (if you need to) and then lower the heat while filling the jars. That way you only need one pot and one water.

I prep my onions by my sink with a bowl of cold water submerging them after cutting in half and after removing the outer skin then letting them soak for a few minutes.
I will have to try this next time!

I put a n my contacts when cutting onions. I also use a food processor to chop them up. I don't like the texture of raw or large pieces so this works great and reduces the eye watering!
Food processor crossed my mind but I didn't want to pulverize them
Use a very sharp knife. "The sharper the knife, the fewer the tears" saying I have discovered is very true.

I have heard that if you put your onions in the freezer for a bit they don't make your eyes tear. I haven't tried it yet but I plan to experiment. TFS 👍🧅

Put the onions in the fridge before cutting. Also, after cut pot in ice water.. that helps some

Heya!!!! Loved your vid. I, too, have never canned onions but I’ve canned everything else. But but….my reason for wanting to comment here is to say thank you for doing a video that follows safety rules for safe canning… i’m in the camp of doing things safely with canning. And if there is science that tells us that if we do it, this particular way, it is proven safe… But on the flipside, I guess there is some value to rebel Canning…Because someday we may be in that place where we won’t have an ideal situation, in which to preserve food.
I am a rule follower by nature! With so many littles in our house, I do not want to do a dance with botulism. I'm thankful for the science that helps us understand how to home preserve safely!

I tell you, I haven't cried cutting onions since I started wearing contacts when I was 18 years old. About the only time they bother me anymore is if I am doing a lot of chopping in the food processor.
I'll have to test this theory next time!
I love taking white or Yellow onions and dicing them real small and pickling them like a relish. They end up tasting like Mcdonald's onions from the double cheeseburgers. (childhood, yum) Plus I don't have to dice 1/4 of an onion for my burger because I am the lone onion lover in my house.

Wearing contacts will keep the onion out of your eyes. It does mine.
Do it the plain onions turn to mush ?
No, they have the same texture as a cooked onion. They are soft but hold together and are not mushy.
