Our technique is that we break it horizontally and then we remove the rod or the stick inside and then if you have pumpkin leaves in your garden you can wipe off the sticky things with pumpkin leaves and then you can start eating or collecting the edible things in a bowl.
If the jackfruit is fully ripen you don't need even knife, you can just break it bare hands.

This technique works better when the fruit is fully ripe as the fibres looses up and the green peel comes off easily from outside. This doesn't seem to be the right way to peel this fruit as it's not completely ripe yet.

Not so easy method
You are struggling to cut the fruit.
What you have tried is the most tedious method. The convention and easy method is to cut it vertically into two sections up to the skin depth. Once this is done insert the knife at the top and slit the centre core little at the top, then hold the top with both hands ( one on each side on along the cut) and then try to split it into two halves by pulling to separate the halves. This way slowly the fruit will break into two pieces. Now repeat the process to split each piece into two. Now cut the core such that the pods are just exposed. Once this is done the pods can be pulled out easily one by one. This way the pods inside will come as a whole without getting cut. I will post a video soon to explain my method.
