      Those definitely weren't store bought tortilla chips, I'm guessing they were pre-made before the video. You know Gordon Ramsay is going to make everything from scratch.

    I love that Tiberio acknowledged that he did it in a Oaxacan style. Most Mexicans don’t even know about the different style of cooking that the indigenous people have. If you want good Mexican food try a Oaxacan restaurant every once in a while

      @@LuisXRivas I think I’d consider myself a No sabo kid. If not me then definitely my brothers but even they know about Tlayudas and Quesillo. It just about culture. Has nothing to do with language. They even know what rellena/Moronga is which not many people know about but it’s a blood pork sausage very popular with Oaxaqueños. Sometimes it’s used to make Tlayudas instead of the Chapulines they used.
      Just cause there’s a language barrier doesn’t mean you can’t or don’t know about culture. Plus on the Mama channel some of them even knew about Tlayudas.

    That “Mexican pizza” is called a tlayuda. It can be topped with different meat.
    The “Oaxacan cheese” is also known as Quesillo

      @@kirstenanderson7931 no problem! Not all Tlayudas are made with chapulines (grasshoppers) tho! Sometimes it’s served with different types of meats. It’s just up to preference. I personally like eating it with something called Rellena/Moronga which is a Oaxacan pork sausage. But it can be made with carne asada or tasajo or even chicken if that’s what you like

    I have had roasted crickets and they are actually pretty good. There are markets in Mexico where you can buy them amongst many other insects, it reminds me of markets in Asia that sell insects. It's what the people that are indigenous would eat before the Spanish had come.

      I just went to a taquiera and got chilaquiles. I was quite surprised the eggs were scrambled in with the chips. It was good but I think I will stick with my normal chilaquiles spot who gives me some fried eggs on top.

    This reminds me of Uncle Roger and other great Asian chefs criticizing him. That is to say, while what he makes is often not authentic it's usually delicious. Even if it's a mash-up of various regional dishes/flavors.
    Also, it would be cool if you could have the names of whichever Papa is currently on-screen somewhere in the corner of the video. Others comment about "so-and-so" said blah blah, but I don't know their names, mostly because I'm lazy.

    @Papah! Should definitely do Mexican Dads try authentic Mexican food and have them try indigenous Oaxacan food. It seems to me that some of the dads are missing out and don’t know about certain dishes.

      To be fair tlayudas are more of a regional thing. Can't find it everywhere in Mexico. I guarantee there are Mexican dishes you don't know about

    As a Mexican-American, half oaxacan. I was disappointed when they called chapulines crickets lol nevertheless they called a tlayuda a mexican pizza. Just goes to show Gordon Ramsay is more in touch with indigenous mexican recipes than they think 😉

    Ramsay is a legend in his own mind. No Italian in Italy puts olive oil in their cooking water, yet Ramsay does it. He uses cream in his carbonara. He puts Worcestershire sauce in his Bolognese sauce.

    Gordon Ramsey once said that the best mexican food isn't found in mexico, it's in California 🤣 That's like me saying the best Scottish food is in Spain. Look, I get it he's a great chef but, he's completely wrong. My abuela would've hit Ramsey with the chancla

    I’m not Mexican, what’s wrong with store bought chips? Shortcuts are bad? I hope I don’t offend anyone, I just like as little effort as possible no matter what I’m cooking and to be honest frying is a pain in the ass lol

      I mean more power to you aint nothing wrong with it if thats how YOU want to do it but traditionally you make them by hand and dont cut corners that just not how its done. Whatever ramsey made is more like nachos.

      Store bought chips don’t have that flavor like some fresh tortillas. Yeah, it’s more time consuming but the flavor is a hell of a difference.

      The texture is different, homemade chips hold up better when they're covered in salsa. Those were closer to loaded nachos than chilaquiles.

    Chilaquiles is one of the best Mexican breakfast choices. I do make chips myself and add some protein at the end like chicken or steak. Red sauce the best option spicy also green is good too.

    In Sweden we also have some "staple" foods, but almost everyone is doing it differently so I guess Mexican food is not "holy" either it's done with the produce of the season and how your father or mother used to do it and so on and on... Ramsey did he's own "take" on it I guess.

    Esa "gran tortilla" como le llamaron ustedes señores si mal no recuerdo se le conoce como tlayuda y si mi informacion no me falla es mas comun en oaxaca y pues no, no es una pizza mexicana esta mas cerca de ser una gran tostada hecha de harina de Maiz

    Hablando solo un poco a favor de aquellos que viven del otro lado del charco en el país vecino la tortilla para hacer tacos puede ir con todo tipo de rellenos que prefiera la gente aunque eso si la tortilla no va frita como si fueras un hard shell tortilla en ese caso seria solo una tostada de maíz doblada
    Por cierto no, los doritos con carne molida no son tacos serian mas bien otra mezcla mas de el snack que se conoce en México como Dorilocos / Doritos Locos y llevan varias cosas tanto saladas como dulces

    Variations can be good, and as a chef Ramsay Is allowed to experiment, that being said, you cant fully experience the real flavor and textures unless you follow tradition, Ramsay's way of doing things aint traditional in a few things he does, which makes me question if he really has studied mexican cuisine in depth.

    I love Mexicans. They are open to people doing their own version of Mexican cuisine. There are no rules. If it looks good, and it's well-prepared, go for it. Italians on the other hand......too many silly rules. Food is food. It's all yummy.

      Tlayudas are more of a regional thing (southern Mexico), not so common in the north. My grandma (80 yrs) has lived in Mexico her entire life and didn't know what it was ..
