If there is a typical Spanish sweet to celebrate the night of San Juan or the shortest night of the year, it is the Coca de San Juan. It is a San Juan cake that is eaten on June 23 and 24, San Juan's day to celebrate the summer solstice.
It is traditional to eat Coca de San Juan especially in the area of ​​the Spanish Levant, especially the Mediterranean coast (Catalonia, Valencian Community and the Balearic Islands), although there are other areas of Spain where it is also consumed.
Coca de San Juan is a sponge cake or sweet bread topped with pastry cream and pine nuts. You can also put candied fruit or candied fruit on it (the one in Roscón de Reyes).

INGREDIENTS (for 8 servings):
