There’s actually already a vegan shrimp option. It can be found at some Asian grocery stores. Looks a lot like actual shrimp, but cooks different. 10/10 would recommend.
I've only done it by making seitan mixed up with kelp stock and mashed sweet potato for the sweetness and texture. It was okay but I'm looking forward to Sauce Stache's take, I bet he can do a better recipe!

Surprised you didn't use palm hearts as an option, that's probably the most most common option I've seen. Mushroom holes could be flat scallops or punch bigger chunks of the mushroom first then slice the rings for thick scallops.
I actually just tossed the mushrooms in my spaghetti sauce I made that night hahah It worked perfect hahah I'll be honest about the palm hearts stuff... It never just tastes right to me. I like them in salads and pretty much every dish where they are just palm hearts, but any mock or faux foods ive made with them, they just taste like palm hearts haha
King oyster mushroom can have it's own entire video. It is amazing, cooks up like scallops, ceviche, as you've seen, calamari. It is great sautéed on mashed potatoes instead of beef, it's an incredibly versatile ingredient in vegan cooking.

SUGGESTION: A local fresh market store used to carry these amazing carmelized onion wraps that were AMAZING. I have looked EVERYWHERE for these wraps (which are vegan) and even the recipe but cannot find them. I'm hoping you're familiar with them and might be able to make a video of how to make them.

Hey. I've never seen such a coconut iver here. All I've seen is with a wood-hard outside shell with hairs. How does one use those types of coconut instead of this one? Or is it not possible.

As long as it’s a young green coconut then your fine. This is what is inside that coconut with the hairs.
