  • Hey guys, here's a peek into the behind the scenes of our first market stall we held at the Rookery Farmer's Market in Streatham. It was a huge success and we sold out of everything but a few jars of jam so were delighted.

    Hello, Lili, I ´ve watched a few of your videos. They are great, You are doing a good job and you sound so natural. I am still learning how to bake sourdough bread and I enjoy it very much especially in the early morning. You are really well equipped with all you need. I use my regular oven since I bake for my family only. If I were younger, I would have my shop also. I live in Brazil and inland sourdough bread is not very well known, but in the capital cities like São Paulo or Rio de Janeiro, it´s the in thing. Next, I plan to use my solar oven to bake breads and buns, it takes longer, but the sun´s temperature makes up for it. I wish you good success in your efforts. You are a ray of sunshine and you will be a success as your business grows and you develop new lines of delicious products. Cheerio!

    Yours would be a very popular stand if you were at a farmer's market here in the States. You could bring twice the product you did there and you'd still sell out. Well done!

      I love listening to music while I work especially if I'm tired and need a pick me up! I just have to turn it off whenever I film so I don't get caught out on copyright!

    Hi there! I am planning to open up a small sourdough bakery and I am struggling with determining how much money my sourdough starter is. I am sure it is simple and I am over thinking it..but how did you decide based on up keep and how much you use per loaf. I use Fillet but man I am struggling with this part ha!

    Hi Lily, just curious. Are you using your discard in baking English muffins and pancakes? I am using mine from various %s like 50/50 white flour and whole meal or 70/30. They taste quite good. I like the way your loaves crumb look like. They are dense and not so airy. I noticed that my bread smells like honey. Maybe because I use 25% to 50% rye flour in my levain at feedings when it needs a little help. Have you noticed the honey smell on yours?

      Hi Jean- Louis, I'm not actually! I have tried making pancakes with them in the past but don't have much time to now. I take my starter out the fridge, feed it on the evening before I am preparing dough, and again on the morning I prepare the dough so it is really lovely and active. On days I am not preparing/not baking the starter goes back in the fridge so not much wastage at all.

      @@LilysLoaf Hi Lily. Pretty much the same I do. Yesterday, I had my biggest baking disaster. Woke up at 3:00 AM to feed my levain. I wanted to bake an apple, cinnamon, raisins, walnut bread. Too early in the morning. I goofed on the water, flour measurements, I added some more flour, trying to compensate, nightmare begins. I winged it with the inclusions, fillings changing the King Arthur recipe - off with the Frenchie´s head for high crime of lèse -majesty - Mr. Klutz found a way to inadvertantly pour out some xtra raw sugar in the blessed mess ( at this point I forsook all Cartesian good sense that was left and decided to jump out the plane without a parachute . I can imagine what will happen if I tried croissants this early in the morning. So I winged it the rest of the way, using my intuitive side and It worked.

      Once I had all my feelings neatly tucked in the dough, I realized that I had forgotten to include the soaked raisins. I mercifully perform a cesarean and restitched the poor lump of dough praying that the baby would be OK. It was success. I baked the bigger one in the English cake form I just bought and named him "Josquin " my first born who gave me such a hard time when he was born -he puts his little finger in between the blades of the scissors when I was cutting his umbilical chord. The other one Gisèle was a little gentler on me. My wife Mirian liked the result. Sometimes when the boat of your life is about to capsize, sing a little song lke " No panic, no panic, we are not on the Titanic. Have a wonderful baking day.

      hello! Thank you - it's a polar 600 litre fridge and most I've squeezed in is 40 x 750g loaves plus 2 trays of pastries and still more room!
