Good video, the best part is that not a single tikka has turned black, the seceret I think is that you have spread thin layer of carefully slected small size charcol which has increased the distance of charcol and the meat and keep the temperature in conrola unlike high tempreature. This may take a little longer but the result is color remains original without getting black and the meat remains juicy. However, I would like to share with you my experience of premerenation iin which I add white venegar and a table of spoon of baking soda and salt and rub this mixture well before adding water. Leaving it for 15 minutes will not only take out the blood and water but will also make the meat tender no matter whatever part of beef are you using. Tenderline or undercut is of course the best but I do no like the idea of meat taken out from leg (Raan). for BBQ boti. Instead using back or meat from shoulder (dasti) is second choice for the BBQ beef. Next time try beef chops but make sure to flat the meat by hitting it hard on board with flat Toka or Bugda as a first step before premerination and pierce the meat with fork . If you wish you may also add little black soya sauce in the main merination to give extra kick to the taste.
