Ginger+Garlic Paste.. 1/2 tbsp
Papaya(half ripe).. 2 tbsp
Roasted Gram Flour.. 2 tbsp
Red Chili Powder.. 2 tbsp
Poppy seed Powder.. 2 tbsp
Cucumis Powder.. 2 tbsp
Ginger Powder.. 1/4 tbsp
All Spices.. 1 tbsp
Mace.... 1/2 flower
Cinnamon... 1 small pc
Nutmeg... 1/4 tbsp
Long Pepper(filfil daraz)... 1-1/2 pcs
Black Pepper.... 1/2 tbsp
Clove.... 1/2 tbsp
Black Cardamom... 2 pcs
Tartaric or Citric Acid(tatri).. 1 pinch
Cumin seed... 1/2 tbsp
Cuceb Pepper(kabab chini)... 1/2 tbsp

Well done Nawed Sahaib excellent presentation & explanation, my self a Culinary instructor at a local college & 6 Times Eat SMART AWARDS winner from the city of Toronto, Bihari kebab is the king of kebabs, I have little concern of 4Tbls spoons of Red chili usually 1 kg meat needs one Tbl spoon of Red chili you also have black peppers, it will definitely give you heartburn.
A little background of this Kebab, only 2-3 places in Patna (Bihar) make this kebabs, in 1940's Nawab from East Bengal visited Patna for business and had his own personal chef team, Nawab asked his chefs to learn local cuisine, they learned this kebab & brought back to East Bengal, after partition this recipe moved to Karachi & now a household name

Yes the Ref Chilli is too much... It should be 2 tablespoon for 2 Kgs... Then it would be perfect...

Itna arz kerdoon ke ye biharion ke her gher men Jo bunta hai ye wo nahi.hamare yahan season ka tel lazmi hai,lehsun bilkul nahi,jaifal jawatri pipli waghaira lazmi juz nahi.
Ya papita ya kachri kyunke bilkul pasty galana maqsood nahi hota hai jaisa yahan shadion men milita hai.Dahi bhi aksar gheron men shamil ki jati hai aur kachi pyaz bhi.
Choonke her Bihari gher men bunta hai isliye koi khufia raz bhi nahi hai.
