2:30 Honestly, probably because the moon is something everyone can see, has that need pattern that can easily be seen as some mystical marking on it, and of course is conventionally out of reach, despite being 'right there' in day to day life. Makes for something relatable as well as unattainable, making for a 'Grand Goal'.
You bringing up Umi being the Japanese word for sea and this talking about monsters and stuff makes me wonder if they may end up showing Yokai like the Umibozu or Umi Zato sometime. To me, this gives the feel of Over the Garden Wall, Ocean addition a bit with the feel I got.
The thought I had regarding the gravekeeper when he said his was Ankle, was of a French Celtic version of the grim reaper named Ankou, that also looks very similar to this design, tall lanky long coat and wide rimmed hat.
If you pause as the image goes from the lighthouse down to the beach there is a hidden item under the place, i love when shows and books do that, hinting at treasure never to be found, much like so many places in the real world! •breaks out my trusty shovel•
You know what this show gives me the feel of, Over the Garden Wall (By the way, if you haven't seen it, GO SEE IT!) it has the old time feel of two people traveling probably from island to island trying to do something. It's creepy but with a added aspect of also calming that feels awesome.
Was reminded of this recently, but highly recommend the animated UA-cam series Monkey Wrench. Has 3 episodes that are all amazingly animated and voice acted, and it's very deserving of more attention. Shockingly few people have reacted to it, and a *lot* of money goes into making it.
When he said his tunes had gone stale, I think he meant they stopped bringing him joy and not that he didn’t play as well? Also the song playing while the boat was being fixed wasn’t made for this pilot (I’ve heard it before), but the credits song you didn’t include here was made for the pilot and was written/sung by Olivia Olson (If that name rings a bell).

I want to recommend another animation that was made at the same time frame. It is called Mech West. It is Steampunk western meets Pixar. That animation is good.

You could technically call the theme/tone of the show as "Grimbright" I think.
