It's a real pleasure watching you work. You're confidence and consistency is second to none! The best Baristas make it look so much easier than it really is, but managing your workflow and keeping the area constantly clean (i.e. wiping/purging the steam wand EVERY TIME, wiping down the tray and countertops, etc.) takes a lot of work and persistence. love the workflow videos. we could never get the rubber bands on the portfafilters to work very well because there is always some water stuck underneath the basket and in the spouts that changes the weight of the handle by about a gram or two. but its not always the same! our handles were la marzocco, but they are older ones that have been used for 10 years.

In my opinion weighing the dose for every shot in such a busy situation is kind of crazy. Most people are not going to notice any difference, especially if they’re having it with milk. You did an amazing job though!
Yea, I see what you mean. I don’t quite follow the exact dose to the mg, but I still do weigh them because the grinders are not quite reliable. Sometimes the difference is 0.5 grams which is terrible bcs then the difference in time would be 4-5 secs. Thank you for watching and leaving a comment! Really appreciate it :)
