    I've dined at Citrus on Melrose in Los Angeles, Citronelle in Santa Barbara, and Central in DC. All were marvelous. At Central I chatted for a time with Michel, who happened to be having lunch when I was there. He was enjoying a huge bowl of Bolognese. I wish he were alive and working.

    Mike Colameco is a superb communicator with an all-consuming passion for gastronomy. Permit me to point out that Michel Richard's pivot from patisserie chef to centre-stage of French restaurant cuisine is not unprecedented: both Gordon Ramsay and the late Michel Roux did just that and morphed into full-on Michelin 3*** chefs, able to command the entire gamut of a French kitchen.

    When was this recorded? These plates still hold up to this day. He was way way way ahead of his time.

    Roux Brothers in the UK? Pastry chefs. It really is not that rare to move across. Ottolenghi was trained in patisserie.

    The fried chicken is probably ok and can be presented on a plate in a way that the old French dudes are happy with since they tend to over-work food in my opinion only for eye-appeal. But I bet if Michel was eating his chicken and chicken fried in the traditional manner, bone in, he would like the traditional chicken better. Any meat or fish cooked on the bone is way way better tasting. Not knocking his tremendous ability and success, just an opinion.

    I bought two of his books.. and these recipes are so odd. And they look so bland. But there it is, the guy was a real competitor.

      1. This is from 04'-05' so he was not speaking about your Dear Lord and Savior, Mr Trump. Rather he was speaking of George W Bush.
      2. It was a comment made in jest, to poke fun at the frequency with which politics is mentioned in everyday conversation in DC, not out out of any hate whatsoever, I am sure.
