I'm from London, I have been in Lima and its an amazing City Lima, BS and Santiago, but Lima touched my Heart I had such an amazing experience! so many things I didn't know about Peru, I didn't expect it. Lima seems to be one of the most European cities in Latin America, It's funny how in Lima people look white but then you realize they aren't because of their accent, there is a big mix of cultures like I heard on this video, Love Lima.. he's not, lima has a lot of cultures mixed making a new culture we had immigration from so many parts of the world. At the beginning people came for so many things like the ethnicities the Spanish colonization brought the africans for example as slaves and then Chinese immigrants which came because they were dying having issues getting food in their country. Later to start a new life being farmers like japenese people from okinawa or just to be away from the 2nd WW while it happened and when it ended like Italian people. Most (not all of them) of these biggest immigrations came also with some of the worst sicknesses from the past centuries, and if they survived they had to stay because there was nothing left for them going back. The rest are people who recently (since last 2 centuries i believe) came and never left like some American, Portugueses or even some British engineers, archeologists and such.
Whoever is watching this , if there is any chance to try Peruvian food , even better , visit Peru please do so , peru has so much to offer and you will not get disappointed, as a proud Peruvian I do enjoy watching videos like this one.

Without a doubt, in Lima "se come como los dioses" meaning in Lima "you eat like gods". Peruvian food is a perfect representative of that blend of different cultures that has influence Peru, beginning with the native people and then the influence of Spain, then the Africans, the Asians (from China and Japan) and the last group, the Italians and French.

I just came back from Lima where I ate at Central. Your video brings up so many great memories. Thank you for capturing it! El Mercado was my favorite meal of the whole trip. I make cooking videos (technique demonstrations), but shooting off site is always so difficult for me. Your video is excellent. If you don't mind me asking, did you have a videographer with you? How do you solve the problem of lighting? Do you bring lights, tripod, etc? Your video quality is fabulous!

A lot of Peruvians have made it a national sport to complain about Peruvian fusion and how it's changing "real" Peruvian food. These people need to remember that gastronomy is always changing, it always evolves through the years, it adapts to cultural changes. As an example, what we call Aji de Gallina nowadays is not what my great grandparents called Aji de Gallina, as back then bread was not part of the recipe and it was considered an appetizer, not an entrée. If Peruvian cuisine hadn't evolved since the founding of the Republic, it probably wouldn't be considered one of the best of the world, as it probably would lack the Asian influence it now has. So stop complaining, people. Just enjoy.
Its not about the people that want to be creative, its the opportunity for them to be creative. Peru isnt as oppressive asmits neighbors. Thqts a fact. Get rid of these shitty regimes, youll see creativity.

Realmente Virgilio no tiene talento, es un buen imitador, sin más. Central is over price tourism food at best. No real Peruvian will eat there. If that is your thing go there. when I travel I prefer to eat what the natives eat, I'm from Peru.
The type ic cuisine in Central is priced as it is, because it's High End Cutting Edge Dining. In other words, you're paying for an artistic cuisine, a person who likes cheap eats wouldn't understand that nor what High End Dining is about. If you're looking to over eat or be bloated after a meal, then try eating in the local market, Peruvian roasted chicken and fries, or eat CHIFA (it's Cheap).
They are a lot but here some I enjoy Arroz verde de pato, adovo de puerco, caldo blanco de gallina, estofado de conejo, anticuchos and lomo santado (but the potatoes have to be made fresh at that moment cut and fry nothing of that frozen potatoes.
So people are no going to get that some people get a hard on when they spend 100 dollar for a plate of food when down the street people don't have nothing to eat. If that is what you like to do that's just fine but don't call it native or local food. If you want to experience other cultures there are better ways to do that. Really people! you are serve in mud lol the owner must think you very naive/stupid lol.

El Mercado is one of my favorite restaurants anywhere. Centrale was the one spot on my list that I didn’t get to. Lima has incredible food.
