Um, but HOW do you make the candy flavors???
The red, blue, and yellow candies that were mixed first are flavored. These were grape-flavored candies :)

Why do they poke holes with scissors? Does it help stretch ?
The reason for this is to remove excess air from the candy. If there is air in the candy, it is said to be prone to cracking when it is stretched or cut :)
With those wooden spatulas for early preparation, body waxing comes to mind…
Why did they bother cutting off the yellow if they are just adding it back in?
Probably to mix the flavors into the red and blue. The first yellow candy they put in has a grape flavor.
It may also be to mix the red and blue candies with the yellow ones to create the ideal color :)

You dont need to color the White part, you could just pull it on a candy pulling hook
Not an expert but i imagine it could be a texture thing choosing to add a white coloring instead of pulling it to add air. With a process that’s been around for this long there’s a method and reason for everything.
