How To Make Rose Cake Pops Using Modeling Chocolate

  • In this tutorial I demonstrate how to create multi coloured petals out of modeling chocolate and how to make a rose cake pop. Easier than it looks! :)

    MODELING CHOCOLATE RECIPE
    90 grams white compound chocolate (i.e chocolate buttons, Nestle melts etc).
    30 grams light corn syrup (I use Karo)
    CAKE POP MIX:
    100 grams vanilla cake of your liking
    2-3 teaspoons of chocolate ganache
    THIS RECIPE MAKES 4 ROSE CAKE POPS
    If you are doubling the recipe, remember to be conservative with your chocolate ganache and add a little at a time. You can always add more, but you can't take away once it's been added. It's safe to have some spare cake crumbs at the ready in case though.
    COLOURS USED:
    All Americolour soft gel food colours:
    Egg Yellow
    Super Red
    Electric Purple
    Sky Blue (mixed in with what I had left of egg yellow modeling chocolate to make green)
    And that's how it's done :) Hope you guys learned a little something new! In hind sight, I would have probably stuck to one colour and just used different tones of that colour for the petals. But each to their own!

    I think this would make a cool wedding cake topper. And instead of cutting the cake, the bride and groom could feed each other cake pops.

    What a lovely idea. I agree that all that fondant or chocolate would be too much. The cake-pop recipe is much better. In fact, I think using a cake-pop base instead of Rice Krispies cereal for molded bits is a better idea, anyway.

      Yes you can! Candy melts are compound chocolate. I do think they have a more artificial flavour though

    Rosie, when your adding color to the chocolate, can we just use regular color gel without it seizing? Or do we have to use oil based chocolate colors?

      Hey +R MARTIN, oil based colours would be better, but once the modelling chocolate formed I just added regular gel and it didn't affect the consistency :) but just to be sure, best to use either powders or oil based colours if you want to stay on the safe side.

    Hi, does the modeling chocolate dry and firm up; safe for packaging and shipping without destroying the shape of it?

      +Jennifer Sim Hey Jennifer, I would say probably not. The chocolate does dry nice and hard, but it's not as strong or sturdy as gumpaste for example. I would use caution when sending these off in the mail. Een 3 days later I could still pull the petals back and change their shape slightly.

    This is so cool. I've been looking into modeling chocolate, never made it before. Before making the petals, was it ganache that you dipped them in, or just melted chocolate?

      thank you! the ganache at the start is used to help the cake pop batter come to life. The chocolate that they are dipped in is just regular white chocolate that I microwaved, no cream added :)

    Hi Rosie, I was wondering hoy can you remove the sugar? I mean a way that can look clean and no with the powder sugar

      Hey +Yenisse Blandon, you could always just use crisco vegetable shortening in place of icing sugar to stop the modelling chocolate from sticking when rolling it out. This is eliminate the problem completely. Otherwise using a brush to brush off all the powder, but this doesn't always take everything off.

      +Melinda Small Hey Melinda, thank you! I use a 2nd smallest rose petal cutter from a pack of 4. I can measure it for you once I am home, but that will be in another 11 days, sorry! But it's a rose petal cutter if that helps at all.

    These are GORGEOUS!!!!!!! I've used just reg modeling choc to make roses but Haven't colored any yet LOL!!!!!! DO U Have to use oil based color or just reg gel hun????? ♡♥♡♥♡♥♡♥♡♥♡♥♡♥♡♥♡♥

      hey +Cherokee Miller, thank you ;D ;D I used regular gel food colour, but only about a drop for each. It worked beautifully, there was no disfiguring or problems caused after it had been added so it should be fine. Otherwise you could always colour the chocolate with oil based colours and then add in the glucose syrup. But gel wasn't a problem for in my modeling choc :)

      +Rosie's Dessert Spot AWESOME, Yeah I haven't seen any oil based ones anywhere near me, but I have a big box of gel colors & I figured if u added it to the cream 4 white chocolate ganache & using crisco we don't have coffa here lol But I'm going to just experiment!!!!!!!! It was such a hot summer, I'm looking forward to the Fall so I can Have FUN BAKING!!!!!!!!!!!!!!! ♡♥♡♥♡♥♡♥♡♥♡♥♡♥
