The three main factors would be (i) high quality lavaliere mic inside your helmet, (ii) use a wind muff on the mic, and (iii) placing the mic behind a cheek pad / point the mic upwards towards the mouth, not down. My mic is very thin, so it fits behind the cheek pads no problem. Obviously there are risks to modifying your helmet, it's not recommended, so be aware.
