Just a note to anyone assuming she's using wheat flour- this is refined cornmeal flour, not the flour we use for baking in the US. It's sweeter and more textured ❤
For all those wondering, maize flour/meal is coursely ground to a consistency almost like semolina or polenta. It is NOT sweet since it's not from sweet corn but rather usual/standard white maize.
I am from South India we make this kind of dish from Millet called Ragi. we call it as Mudde. exactly same. we use Ragi meal or Ragi flour. a staple food. we also use Jowar flour which is white Maize to make Ugali kind of dish.

I had heard of this, Ugali made from corn flour. In India we prepare this from wheat flour called khichu and make crunchy papad with it. Looks yummy.Nice...😋😅
Its our staple food here in Kenya, a mix of maizw flour or maize meal and water mixed to form a dough like texture though a bit soft, cooked and usually eaten with vegetables and meats as sides
That's how it cooks properly. If you use a non stick pot, the crust (mokoro) will keep mixing back into the ugali as you mix it. If you want the sufuria to get clean faster, just pour hot water in it once you remove/serve the ugali. It comes out faster than with cold water.
1 have the measurements on my written recipe on my blog, but it's an estimation, the measurement depends on the number of people, but for one person is say 1 cup flour to 1/2-1 Cups Water that is added little by little
