I love all the recipes and l also have to thank you for presenting everything in detail so, us who don t have experience in morrocan cuisine can understand how to cook it.
This is a dream!!!! 😍 I love Morocco, i lived there for about 5 years and I miss it!!!!! I also love vegetables so this video is just perfect for me!!!!! Thank you 💖
My aunt prepared this exact same dish for a buddy of mine, since he is a vegan. He told me that it was hands down the best vegan dish he ever had! I hope other vegans have the same experience. But seriously get a Tajin cooking pot if you want to prepare this dish properly. It won’t be the same if you did it in any other pan!
Bseha ❤️❤️ shukran!! I love your channel. I studied in Morocco for 3 months and came across your channel. I miss Morocco so much and am so thankful for your channel with all the recipes. Shukran bzzff hoiti 🙏
Salaam Alia, I just want to say I love all of your recipes but especially your tagines! I went to Morocco a few years ago as a teenager and when we came back the first recipe I tried was your kefta one. I haven't looked back from your channel ever since and will Insha'Allah try this recipe, too! Thank you for all of your recipes. May Allah reward you x
Hi Alia. I love your recipes and your style of cooking. Would it be possible for you to do a video about vegetable cutting skills which Moroccans do using their hands (safely) without using a chopping board? I haven't seen any videos on UA-cam which show how to do this. It would be a great skill to acquire and it would be good for people to learn how to prepare tagines using traditional techniques as well as efficiently making them with little cleaning up to do. Thanks in advance.
yeah that is not a very "professional" technique but it actually much more comfortable and less messy, just make sure to use a dull knife (something that wouldn't cut into your skin if pressed against it). You'll need to press a little harder though to split the vegetable.
I just made this recipe today using my tagine for the first time. This recipe is simple and so good!! I was very impressed with how quickly the tagine cooked the potatoes and vegetables, turned out perfect! Thank you for sharing this recipe =]
The way you are cutting the vegetables reminds me so much of myself and my Yiayia! My Irish fiancé was baffled that I never used a large chefs knife to cook. A small one feels more like home to me. 😂
thank you so much! your videos are beautiful to watch and you explain very well the different techniques. you just got a new fan ! please make many vegetarian recipes. .much appreciated ! :))
You can use any pot, but if you have a crock pot that's the American version of the tagine (the idea is to slow cook) except the slow cooking + clay pot = outstanding taste!
yes, you can use it on the glass stove. Just make sure you place the tagine first and then turn the heat, so the tagine slowly heats up and does not get a thermal shock. :-)
I really like your recipes... but I am vegetarian and I have tried to skip the meat from some. could you include more recipes like this one or give option for vegetarians? thanks
Karen Cheek Because it is a berber dish (berber refers to Ethnic North Africans or Amazigh ,most Moroccans are berbers but mostwho live in the cities have forgoten the language and the culture that got replaced by arabic and islam culture during the Islamic collonialism of north africa centuries ago)
Hitman Hatim It is absolutaly not a berber dish. Stews are very famous is many eastern cultures, and are an ancient arabian dish. In morocco there is no such thing as a berber tajine. There are tajines that are made by people living on the countryside and on farms, and do not have the finances to buy meat. Therefore, a tajine made without meat is now associated with people living on the countryside. In the whoke video, alia and the other chefcook did not speak of a berber tajine, Alia probably later on decided to call it like that.
I would personally advice against using tomatoes. Because this is slow and long cooking, the acidity of the tomatoes will penetrate the vegetables and make them taste really off. That only works if the vegetables are short in contact with the acidity in my opinion. I tried both ways, no tomatoes wins hands down.

It's such a pleasure watching a professional at work.
I simply LOVE this recipe!!!! And wow! She’s SO much better with the knife than I am! She’s a real pro! Thanks for posting!!!!

I just made this recipe today using my tagine for the first time. This recipe is simple and so good!! I was very impressed with how quickly the tagine cooked the potatoes and vegetables, turned out perfect! Thank you for sharing this recipe =]
Cristal Solis Hi, just curious if you don’t mind me asking - where did you buy your tagine?
Priscilla Diaz hi! I purchased my tagine from an online store based in Florida. I can send you the link!
Priscilla Diaz treasuresofmorocco.com
Priscilla Diaz it’s great because the couple who own the shop travel to Morocco to get all their stuff they sell including the tagines =)
The way you are cutting the vegetables reminds me so much of myself and my Yiayia! My Irish fiancé was baffled that I never used a large chefs knife to cook. A small one feels more like home to me. 😂
ohhh I don't have the tagine😢I'm from Singapore. happy Ramadan all Muslims 😃

thank you so much! your videos are beautiful to watch and you explain very well the different techniques. you just got a new fan ! please make many vegetarian recipes. .much appreciated ! :))
Hey Alia! I love the recipe, unfortunately I don't have a tagine. Can I use a saucepan instead? .
TIA
You can use any pot, but if you have a crock pot that's the American version of the tagine (the idea is to slow cook) except the slow cooking + clay pot = outstanding taste!
omg looks delicious
This looks fantastic. Can anyone give me the name of the bread shown in the intro at 7s and 14s?
it's afanro bread it's an amazigh (berber) word . but you can just google amazigh/berber bread or moroccan bread.
Alia could you make videos about moroccan bread? It would be interesting )))
Yeah!
I would like to bake my own Moroccan bread!
يا سلام

Will the amounts here serve one or two people?
Depends on whether you're a normal person or if you're me when I'm hungry :p but yeah this is usually a two person serving.
Great
I'm drooling...

Yep, my mother does it all the time!
MugiwaraRan Ran Thanks😀
yes, you can use it on the glass stove. Just make sure you place the tagine first and then turn the heat, so the tagine slowly heats up and does not get a thermal shock. :-)

What kind of turnip is that?
💕🇲🇦 MOROCCAN IS THE BEST
thank anyone cook this
I would love to get myself one of these tagine clay pots!! Can I purchase them online ??
Yes
Love the dish, we also cook it like that in the famous city of Fes! What makes it a berber dish though, that is confusing?
Tajine on its own is a Berber dish. All Moroccan dishes are Berber.
YUMMY!
Maschallah
Is the tagine placed directly on the flame?
yes, this one is - it has been cured and it's holding fine. I would suggest to use a diffuser if you can. much safer for the tagine.
Thank you, Alia. I need to find a good tagine
thank u for all
wouldve preferred to see amazigh instead of "berber" masja nesh sne7 kinew shahana7 nesheen
🍵🐸
DamaskedRedWhite I wanted to say that! Amazigh not Berber
I really like your recipes... but I am vegetarian and I have tried to skip the meat from some. could you include more recipes like this one or give option for vegetarians? thanks
check my website and see salads, soups, etc. sections. they are mostly vegetarian. www.cookingwithalia.com/
Why is this called Berber? Is it the spice combo?
Karen Cheek Because it is a berber dish (berber refers to Ethnic North Africans or Amazigh ,most Moroccans are berbers but mostwho live in the cities have forgoten the language and the culture that got replaced by arabic and islam culture during the Islamic collonialism of north africa centuries ago)

I thought the purpose of the Tagine was that it was self-basting?
I would personally advice against using tomatoes.
Because this is slow and long cooking, the acidity of the tomatoes will penetrate the vegetables and make them taste really off.
That only works if the vegetables are short in contact with the acidity in my opinion.
I tried both ways, no tomatoes wins hands down.

nice recipe, but we do not need 13 xylophones dominating your voiceover.
Had to mute the sound as 'music' enough to drive one crazy!
Berber tajine? All the food in morocco is berber!
