As a Puertorican (we also have chicharrón, as do most if not all hispanic countries) I entirely approve of this. The only thing I would do different is that I would also season the meat and not just the water. On a fun fact that I learned, Spain also has chicharrón but they call it “torreznos”. Which makes me think that we all over here in latin america inherited the dish from Spain.
When I ate pork, I had mine with a stewed tomato, okra and black eyed pea soup with homemade buttermilk biscuits 😩😩😩😩😩😩 my great grandma is from Griffin and she would always make it for those cold rainy days or the winter. Awh man smh
