    Ingredients
    2 eggs (room temperature)
    180 g sugar
    (1 cup) sour cream
    125 g vegetable oil
    1 tsp vanilla extract
    1/4 tsp salt
    260 g all-purpose flour
    2 tsp baking powder
    1/2 tsp corn starch
    1/2 lemon (zest and juice)
    250 g blueberries
    Powdered sugar (for sprinkling)
    Instructions
    Prepare the Batter:
    Preheat the oven to 375°F (190°C).
    Grease and line an 8-inch springform pan with parchment paper.
    In a large bowl, beat the 2 eggs and 180 g sugar at high speed until the mixture becomes light in color.
    Add 125 g sour cream, 125 g vegetable oil, and 1 tsp vanilla extract add 1/4 tsp salt to the egg mixture. Beat on low speed until combined.
    Incorporate Dry Ingredients:
    Sift together 260 g all-purpose flour and 2 tsp
    baking powder.
    Gradually add the flour mixture to the wet ingredients in three batches, mixing until just incorporated.
    Prepare Blueberries:
    1/2 tsp lemon Zest and juice half a lemon, then add it to the batter and mix until combined.
    Toss 250 g blueberries with 1/2 tsp corn starch to coat them lightly.
    Assemble the Cake:
    Pour half of the batter into the prepared springform pan.
    Sprinkle a portion of the coated blueberries over the batter.
    Pour the remaining batter over the blueberries, spreading it evenly.
    Sprinkle the remaining blueberries on top.
    Bake:
    Place the cake in the preheated oven and bake at 375°F (190°C) for 55 minutes, or until a toothpick inserted into the center comes out clean.
    Allow the cake to cool in the pan for 10 minutes before removing it.
    Serve:
    Once cooled, sprinkle powdered sugar over the top of the cake.
    Slice and serve your soft, moist, and juicy blueberry lemon cake.
