Anyways, I like your work because I love pastel colors and it seems to me you also love them. I don’t mind the regular bright colors, but my preference is always pastels. Funnily enough, I'm watching this whilst making your sticky toffee cupcakes for the second time in 2024. My boss's going away party is Friday, and she requested them. Actually, I had to stop watching for a bit because I was in the middle of cooking the custard and almost let the eggs scramble! Fortunately, I saved it just in time. Now it's in the fridge cooling, and I've resumed the video.
I agree, sugar paste lost popularity. I remember we used to use apricot jam to stick the paste to the cake before butter cream and crumb coats became a thing.

Most birthday cakes are covered in fondant, it’s quite likely you’ve eaten it before.

Would you consider making an old-fashioned fruitcake with the marzipan, fondant, multiple coats of royal icing and Lambeth-style piping?

I always freeze my cake to prevent crumbs of cake when I ice it

Can I use water instead of edible glue?
Yes, you made need to hold the parts in place for a few seconds whilst the sugarpaste gets gummy from the water. X
