Just a small correction for the grilled fish + tahini dish at Santorini restaurant - pretty sure the chef was adding cumin (not just pepper) to the sauce before plating
So basically they strech the fish to feed more people by crumbling it on tahini. This is a very common method of Levantine cooking stretching meats and proteins by bulking them up with vegetables and sauces.
