    I love the food science aspect of ATK - I bought the vegetarian cookbook and it's full of great recipes, with thorough explanations. If I am missing an ingredient, those explanations help me determine if it can be subbed lol

    I have made your recipe, Elli.
    Except I put water chestnuts for extra crunch. It changed my thoughts about green bean casserole. It is delicious and I love it, plus it's healthier.

    Last year, I forgot to buy the cream of mushroom soup, but I had golden mushroom soup and cream, so I used those. It was fantastic! I also put criminal mushrooms in mine as well. So you can try golden mushroom soup in stead of chicken soup too!

      Maybe coconut cream? But could change the taste. Maybe sauté some bacon use the oil to sauté the mushrooms n beans? Might help with the coconut flavor.

      The pan they use is the oxo 12 inch nonstick skillet. I plan on buying one soon to replace my current one. It’s starting to peel.

    Excellent presentation by Ellie! Love using all healthy fresh ingredients. Canned green beans and canned spinach should be banned from markets!

    I find the texture of frozen beans has the best balance as they are softer than fresh and able to hang onto sauce better than the waxy fresh ones.

    Don't add salt to the mushrooms until after they have browned. If you do it before then the mushrooms release all their moisture which will make them steam instead of brown.

    Our family has always used cheddar cheese soup instead of cream of mushroom soup. It so much better.

    Looks so good but I am a vegetarian. Can I substitute vegetable broth or stock? Sometimes that won’t work.

      I am not ATK, but I am an experienced cook. A vegetable broth will work just fine.

      Really? Seriously? Are you kidding? Dah! Nothing like having to stick your veganism in everyone's face and make this chef feel bad because she used chicken stock. Get a life, you know damn well you can use whatever stock you want, you just had to make a stand in the comments!!! :P

      Instead of heavy cream, I would try equal parts silken tofu and soy milk, vegan cashew heavy cream, or non-dairy milk (almond or cashew) with cornstarch added. Oh, and vegetable broth. 😏

      Coconut milk is always a quick substitute for dairy, obviously with a mild, fresh additional coconut taste

    This is a legitimate question... why shallots instead of onion? So many recipes call for them, but I don't understand the difference. I am a home cook who does basic cooking for my family, so use general terminology, please

      Shallots are milder

      @@sandrah7512 thank you. And you're right, I tend to just reach for an onion. I really like onions, so perhaps that's why I haven't had any flavor problems when I've used them instead of shallots. But the texture element is one I will have to bear in mind.

    Consider olive oil, avocado oil or coconut oil, all more healthy than vegetable oil. Please never use canola oil. Canola oil is also used as a pesticide. Google it.

      I was wondering when someone was gonna mention that. We need to stay away from vegetable oils. (Canola, corn, sunflower, safflower) Avocado oil is great because it’s neutral and can be used for high heat when necessary.

      I have grapeseed oil, vegetable oil and extra virgin in my house. I use vegetable every so often.
