I recently went kokanee fishing with Monster Mike and Will Moore. We caught both kokanee salmon and trout on that trip. In the last video, I showed how to do a simple dry brine for kokanee salmon or trout. This is a continuation video. This is how I smoke my fish using the Big Chief Front Load Smoker. hey JU, I smoke salmon and trout very frequently and my smoke comes out really well ...just a tip to help u out when u dry brining. u really should rinse ur meat to get the brine off.. that WILL make ur salmon or trout alot less salty. from my experience I use non iodine sea salt it makes the taste 100% less salty..and if u want to spice it up use Cayenne and red pepper flakes trust me u won't go wrong and to sweetin it up glaze it with honey...If I see u up walnut grove this salmon season and I got some of my smoke salmon ill let u try some ...see u out there and FISH ON!!

The Big Chief & the Little Chief are electronic smokers that have no temperature regulating devices. They typically smoke at 160 degrees Fahrenheit according to the manufacturer design.
