The only thing I would change is replacing the table salt with coarse kosher salt or your smoked salmon will be way too salty!
That’s almost the exact recipe I use! Super simple but delicious. I just made some for a birthday party and it was gone in no time, everybody loved it
After filleting them, put all fillets in a 4oz salt per gallon water mixture for 30 min. Then rinse and brine. Takes away all slime from skin. :) great video
nice pro tip. will try that next time. thx
I'll have to send addicted fishing a video on my candy smoked rainbow trout fillet' s. There amazing and the kokanee is amazing aswell
I do that in the same Rubbermaid container!! I like perfecting things!! And those look perfect!
My Uncle commercial fished Kokanee in Idaho he never filleted them. The skin and bones come off very easy he canned them as well. That was in the 50s and 60s in north Idaho. I sure loved those things. He used an old fridge and would. Smoked over 100 at a time. I was thinking to see where they may be close to where I live now.
Good recipe and very well presented!
Good info. I like to finish them off with crushed red pepper rather than black pepper.
Looks great.
A great step by step process. Nicely done.
Curious if you ever cut pin bones out as part of filleting process? Pulling pin bones one by one is an arduous task, and a time sucker. But cutting Pin bones out removes a very thin slice of meat, is time effective and makes for a COMPLETELY boneless fillet. When I smoke fish pin bones are soft and a real annoyance to pick out a piece of fish being eaten.
Many good tips, much appreciated
You guys absolutely exploded in the past year.
Excellent Process I have always wanted to smoke some fish.. thanks for the info.
That’s what I’m talking about. No bass videos lol
Lol come on now! Gotta show some love to the bass guys.
Can’t fish closed and blown out rivers. ADX need a fix and the bass vids are fun.
They call me peter paul, I fish for them all. Bass, Walleye and trout in the fall. :)
Looks good.
Looks amazing. “The Legend!” Lol
🤣🤣
Tutorial is 💪💪💪 💋💋💋
Great video, thanks for the how-to!
I make sure to put the first layer skin side down ON the Brown sugar
That is exactly how I do mine, I even use the same tub to cure them in lol.. about 30 minutes before I take them out of the smoker i put some real maple syrup on them.
Thank you! Ya mine calls for quite a lot of brown sugar too,but it's not as over powering as you might think.
try brushing a little honey before you add cracked pepper it keeps the pepper on better and gives its a great sheen!!
You should make a video how to fish a bead for winter steelhead
Fishingman on it!
What temp and how long should I leave the fillets in the pellet grill to bring up the temp to 165 after smoking for a few hours?
I use this one also works great. My real comment is. When smoking the whole Kokanee SKIN ON is it as good filets? I'm am going to try to dip my single frozen fish in boiling water real fast just to get the skin off. Then I will dry brine it.. Wish me luck.
Do you pull or cut the pin bones out of kokanee or not wortry about them? Thanks!
OK, now I want to fire up my smoker. LOL
How many cups of salt do you use?
What kind of wood do you use for smoking Kokanee?
Sharp knife! What do you use to sharpen it?
How do you store them after smoking?
Needs some maple syrup!
You didn't show us how the whole fish turned out. :(
Tried smoking Kokanee once but I couldn’t keep it lit
Looks like candy to me
Don't use iodized salt! Yuk. Sea salt or kosher
