Btw, hello’s from Oregon. When the neighbors are trying to get rid of their overgrown zucchini I gladly take all I can get because I adore using the big ones as stuffed zucchini. I cut the zucchini in half lengthwise then make a shallow slice on along the bottoms of each half so that they sit level in the pan. I then scoop,out the seedy middles and place in a large long cake pan or shallow roaster. Next I make a mixture of ground beef and pork, onions, crushed tomatoes, garlic, salt, basil and some tomato paste- add a bit of sugar and cook in a skillet until all ingredients are well cooked through and some of the excess water from the tomato puree is reduced then fill each trenched out zucchini slightly heaping the mixture. I then top with lots of grated medium cheddar cheese and pop it in the oven at 400 F cooking until the zucchini is fork tender and at the last, if needed, I turn the broiler on to brown the melted cheese. It’s absolutely heavenly!
The pasta sauce is surprisingly delicious. I added a shallot as well as garlic. I used heavy cream instead of crème fraîche, and Pecorino instead of Parmesan. It was delightful!
That’s exactly what I was going to say. Shallots, onions, and garlic would’ve melted down in slow cooking sauce and set it off, but I would love to taste it as he created as well.
That slow cook pasta would great for my 2 year old, they will love it. Good for a bulk cook then frozen for diy ready meals ready for winter. Nice one. I like making cakes when we have to much from the garden to give away as is.
🤭I’m smirking 😏 as I listen to you talking about being brave with a mandolin slicer because I just finished my daily dressing change from a fingertip amputation 😬😖, from my mandolin, while slicing zucchini a week ago (you call them courgette). These kinds of wounds take a long time to heal unfortunately. So the fear is definitely well founded.
I ve always been a big fan of a courgette salad! The taste is nice and mild, it goes together with almost anything, i like the texture of it, and it sort of feels more filling than many other salad veggies 😊
Lovely. I often use courgettes in salad instead of cucumber. I also griddle slices and use instead of pasta sheets in lasagne. Will try this sauce but on top of griddled chicken as we don’t eat pasta!
