Nice video! When I think pan pizza, I think Chicago style, and I remember a chef in Chicago telling me that they put corn oil in the dough, which gives it the unique Chicago quality, and unlike everywhere else on Earth, cheese on the bottom (sliced) and sauce on top.
I love that nick is actually honest about these fast food places and how a lot of them have decent food. He's not like other youtubers that are gonna have a huge dramatic, pretentious meltdown over a slice of pizza or a cheeseburger
ingrediants: 1100 grams pf bread flour 38 grams seasalt 2 grams dry yeast 780 grams water olive oil melted butter basil tomato sauce more salt mozzerella option: pepperoni, more cheese, sausage STEPS: Add 1100 grams of flour, 38 grams seasalt, and 2 grams of dry yeast. in a seperate bowl, add 780 grams water and slowly pour in other bow while mixing. knead for 2 minutes until it takes shape. to a seperate bowl, add a little olive oil, then put the kneaded dough in there. cover with towel for 24 hours. On a cutting board, put little bit of flour. mix the dough in the flour. then cut into little dough balls. to another small bowl, add a little olive oil and put dough ball in. put in fridge for 24-48 hours. make sure you fit all dough in those little bowls. once refridgerated, use as much dough as needed for your cast iron oven safe pan. make sure dough is light and fluffy. paint melted butter on the cast iron pan. bottom and sides. take dough and put in pan. oil hands and start spreading dough gently in pan. lighlty pinch up against edge of pan. on a seperate cutting board. take basil and cut it up into thin strands. put basil into canned tomato sauce along with some salt. spread sauce lightly onto the dough. very lightly. go right around the edge of the pan with the sauce. add mozzerella to the dough and sides of pan. put lots of cheese. then put in oven at high temperature and take out when golden brown. you are free to use whatever topping you want.
Used to work at Dominos. What makes it different from normal hand tossed (besides being cooked in a pan) is the dough itself. It has butter flakes in the dough, while the normal dough doesn’t.

Made this last night after fermenting the dough for 96hrs (not on purpose, but should've been) and it was AMAZING!!!!! Me and my folks have decided we will make this on saturdays vs ordering it, that is how delicious it turned out....the dough was unbelievable....yum yum yum!!!! I will be making some more dough TONIGHTTTTTT!!!!!
what temp was your oven set on and how long did you bake it for? I understand every oven is different, but ive never cooked anything like this before and would love the approximate time and temp before attempting it.
Only thing I noticed (not that I was looking for a flaw) was that the bottom crust shot showed that the edges of the slice were brown and the center was white which makes me think that you threw the single slice back on the cast iron because it wasn't crispy/brown enough when you initially cut the slice. Love your stuff. I imagine you did it for the aesthetic. Good on ya.

This looks good. I had pizza that was called “Chicago style” but it was really a casserole. It was at a place called “Uno.” They were very proud of their casseroles.

You can finish crisping the bottom of the pizza on the stove top when using a skillet. I'd personally like more color on the bottom than what you got but still looks good.

It was fun to use my own Basil plants to make a sauce. I was not comfortable going above 500 on the oven, so took at least 15 mins to get the cheese golden. Got my crispy edges using the sauce, but my dough was under in a few spots, so I probably could of stayed in longer or went to max 550. Hungry just thinking of it and look forward to trying again! Putting a little olive oil over the cheese before putting it in the oven makes a huge difference. Without, the cheese will burn and dry out. Thanks for everything you do for the inspiring home cooks out there. 🙌
