    It is all about compost. The world is all about compost. Thank goodness we have finally learned (again) to love our microbes.

      Yeah, the world seems to have become obsessed with killing off anything microscopic. Masks, sanitizer, antibacterial everything, they seem intent to destroy ALL microorganisms. They seem to forget that without our native microbiome our digestive tracts can't function properly. That's why when taking antibiotics that kill OFF our natural bacteria and yeasts, our guts stop functioning correctly until the colonies of bacteria and yeast are reestablished.
      They are SO isolated from our NATURAL environment that they view it as an ENEMY, not REALIZING that we can't LIVE without it. God created a perfectly balanced, and beautifully organized world for us to live and thrive in, but being HUMANS we just HAVE to stick our fingers in the pie, and "FIX" things that don't NEED fixed.

    I grew up on a farm and my parents canned, dried, and pickled lots of vegetables and fruits. In our very large garden, about a fifth of it was a large grape arbor for concords and a very large strawberry patch. We also had a nice orchard, which had various trees that provided apples from June until frost! There were also a few cherry and peach trees. Our land wasn’t flat; it was all on a slope, similar to your land, which worked out just fine for us. We had other “patches” of ground where my parents planted one with extra potatoes, another with lots of squash and pumpkins, and my dear mother canned vegetables from early summer until late fall! My dad raised lots of corn for our animals. We also had two horses, cows, and lots of chickens and pigs! Your lovely farm is working out just great for your family and it always reminds me of the one I grew up on!

    Wouldn't it be easier to build a tractor size door on the side or back of the chicken coop to access the compost easier? Seems like there's got to be a less labor intensive solution. Although I'm sure your kids are all learning great lessons about working together.

    Oh man...I love the cowboy candy! I can't take things too spicy but just a little at a time. I'm gonna have to try the pickled eggs in the brine. We have been taking the brine/juice after the jalepenos are gone and mixing it with cream cheese and having it on toast or bagels. It's not crazy spicy but the flavor is the bomb!

    I love how Buggy tastes everything you cook. I saw her sticking her little finger in the mustard as you made the chicken pinwheels. I think being a farm kid, eating the food your family grows, does away with those "picky" eaters. Country, farm, or homesteading kids don't get that "McDonald's" type of food fetish. Thank you for showing her in the kitchen with you.

    Meg, my favorite thing to do with the brine is to add it, with some dehydrated peaches, to my kombucha for the second ferment. Between the sweetness of the peaches and the sweet hot of the jalapeno brine...OMG! Just so good!

    love love cowboy candy, but when i make mine i dice them instead so i can spread it on everything yummy, also any left over brine i jar it up to put into recipes my daughter also begs for the brine she loves spicy.

    in australia we eat a lot of two tooth lamb as roast with garlic infused in the roast and mint jelly on top as a sauce

    What about making one side of your chicken run a wide gate so you can get your tractor in there and scoop everything up instead of always having to shovel it in to the bucket….😬😍

    I love sheep, they’re the best. They will improve your pasture with a cow and chicken rotation. You can also put them in the woods and will clear shrubs like goats.

    Hi 👋 traditionally lamb is served with mint jelly...since the seventies we have eaten it with jalapeño jelly...looks like cowboy candy will be the perfect addition to lamb... Grow Team Grow 😊

    Your chickens work as hard as you all do since they help breakdown the topsoil!! You guys have turned that red clay into wonderful soil thanks to the rich compost you've been adding every year!!👍 The baby pigs are so adorable!! Little Buggie sure loves riding the tractor with her dad!❤

    I've watched you since you first bought this property. This is a well-intentioned suggestion! Why have I watched you take compost material in and out of the east end of the chicken coup and move it around to the west end each week that you work on the compost pile? I thought locating it on the west end was the best location like you did. How about a tractor bucket-wide double door on the west end? Work the compost before you let the chickens out in the morning with them inside? Scoop poop/compost pile with the bucket instead of your back and a shovel? Just a thought...

    Meg, I made coyboy candy first time two years ago and was hooked. I always have extra syrup and can it in 1/2 pints to add to chili and marinate meat.
    Ben, I grew cucuzzies, the next year I had a bunch volunteer but they didn't come back last year. I'm not a fan of their flavor and I don't have pigs here but the chickens loved them.

    I also made cowboy candy last year, small batch. Brought it out on Easter, and my boys loved it! One of them so much, he asked for a jar. Gave him a pint jar and he told me a week later, he ate the whole jar in one day. We were having it on Ritz with cream cheese. So far I have about 12 each Craig's Jalapenos, Orange Spice and Lemon Spice coming up. Can't wait to make it this year!

    I somehow got jalapeños when I thought I was planting bells last year. So… I made cowboy candy for the first time last year. It’s now a staple. Everyone loved it. We are out😢. I seed started so many jalapeños I’m going to have enough to make CC for the next 5 years😂!

    The brine also makes a great marinade for beef/venison... a tougher cut, cube or minute steaks.. so delic!

    I’m not big on heat either but luv the flavor of jalapeño! I too luv beet pickled eggs👍🏼😋

    Meg, i watch Simple Living Alaska and they can cowboy candy that's where I first heard about it so got the recipe and like you delicious I always make hot pepper jelly and use as a marinade for chicken and pork as well as a snack on crackers with cream cheese.
    Ben, you know your getting old when the Dad jokes start coming two days in a row 😂.

    I make candied jalapenos aka cowboy candy from frozen and fresh. But I make huge batches like 36 jelly jars or 22 ish pints at a time. Mine has tumeric, chili flake, sugar, vinegar, and a few other things. If you have a food processor try chopping the jalapenos like you would cucumbers for pickle relish...its amazing on brats.

    I saw that one of the homesteaders I watch put her peppers in the food processor instead of slicing them. You usually cut the slices up when you eat it. So that’s what I plan to do this year with mine also.

    Cowboy candy was the first thing I ever canned besides jellies and jams. It was also the first thing I went through 😋. It's so yummy! I need to make more this year. I'm on my last jar. I even canned up the leftover brine. I've been putting the brine on pulled pork over pasta (cleaning out the freezer/pantry...trying to get creative with what's on hand). Brining eggs in it sounds good! I will give it a try.

    My husband loves cowboy candy. I made 30 half pint jars last year and almost out again. We also gave away a bunch for Christmas. I cheat and toss mine in the food processor it's makes it just like relish. I also add all kinds of other peppers we grow sweet and spicy one. I'm definitely going to try the pickled eggs this year when I make more.

    We burned some brush this winter and there's some burnt offerings left. If I understand you right Ben I could toss that charred material into my compost pile? I'll give it a try... along with some aged horse manure.
    As for hand tools... I guess it depends on the situation. We have SO many roots to get through.. it takes FOREVER. I got auger envy. 😅

    I love you dearly, Meg. I am working through the last of my tomatillos from last year. My mom uses it for her chicken enchiladas. I made 9 quarts. Randomly took a jar up to my sister at Easter, her husband loved it so much, I planted more tomatillos for this year....trying to figure out where to put all of the pepper plants I will need to make more this year. I just harvested my cilantro.... I am setting myself up for either a massive failure or really long days of preserving this summer. Either way, you do inspire me. I made cowboy candy last season. It was amazing. Ben, you are also amazing. I feel truly honored that you share your journey here on UA-cam. I pray God continues to bless you all, as your videos bring me joy.

    We love Cowboy Candy on crackers with soft cheese. Or on slice of salami with soft cheese. It’s a great appetizer snack.

    Meg, we took some cream cheese, bacon pieces and the cowboy candy and spread them on tortillas and cut in slices. Sooooo good. We also took the extra syrup and marinade chicken then grilled.

    Meg, hearing you talk about the cowboy candy and pickled eggs has convinced me to try it. I've heard of cowboy candy but I thought it was something super sweet and I don't have a big sweet tooth. I DO love some sweet, salty and spicy though! Thanks for sharing. I'm growing some pumpkin spice japs this year and I always have an abundance of eggs d/t our 13 hens, so.... now, I know what to do with the extras.

    We never canned growing up, the vinegar and sugar would preserve it, all chutneys and jams were just hot packed into sterilized jars, that being done using the oven. Then stored in a dark cool cupboard, they keep for years.

    Sounds like cowboy candy pickled eggs is Meg's guilty pleasure LOL. I'm all about trying new foods, and there aren't too many things I won't try. But gourds are a definite no-go for me. It's almost impossible to get past that smell. On my farm one time I did try eating a regular small ornamental gourd when it was young, thinking it would taste like a cucumber. Wrong! It was so disgusting I ended up spitting it out.

    FYI the brine makes a great marinade for meats. We always have extra than goes in the jars and we can the extra for brines. Also makes a good sticky rice.

    I am planting 12 jalapenos just to make taqueria peppers, like the canned ones with carrots and onions that have a small amount of oil on top. I made a gallon last year with the last of my peppers from blending recipes I found online. We gave up sugar after I made a gallon of cowboy candy that was sooo hot I couldn't even eat it. Hubs ate every bit of them within 2 months! I also just received my 2 Mexican Oregano plants from Etsy, growing my own even though they have to overwinter inside since they are tropical plants. ALL commercially grown oregano was found to have heavy metals in them, even the organic brands.

    Hey Meg, I too found the joys of cowboy candy last year and we used the liquid gold (brine) to make a bbq sauce that is heavenly. I found it on pinterest called liquid gold bbq sauce. When you are all stocked up with pickled eggs, give it a try. Thank you so much for your channel! I have learned so much from ya'll since we seriously started homesteading last year.
