You mean shikai. Bankai does not need a long spelling. You only need to say "Bankai, Hihio Zabimaru" for example. But for shikai, you need a spell and then call your Zanpakutou's name.

Kumo (雲) is indeed a cloud and kakureru (隠れる) is hide. But 雲隠る (kumogakuru) is a different verb meaning "to hide/disappear behind clouds". The k changes to g because of sth called rendaku (yeah, grammar stuff xd). Other example of rendaku: おり + かみ → おり-がみ ori + kami → origami ("fold" + "paper" → "paperfolding") 雁 is a wild goose, the pronunciation differs again based on which word u attach to it, and it could either be gan or kari, in this instance, it's kari, cause it's together with naku, and it means "crowing wild geese". It's taken from/inspired by a Japanese poem, the meaning would be sth along the lines of "Hidden in the clouds when wild geese crow" or "Hidden in the clouds, the time of wild geese's crowing."

And,「雲隠れ、雁鳴く時」this line came from 「雲隠れ、雁鳴く時は 秋山の 紅葉片待つ 時は過ぐれど」 translation:when wild geese crow while hiding in the clouds, I just wait for autumm leaves in mountain of autumn. hough season of autumm leaves has passed... Kazuha said only “when wild geese crow while hiding in the clouds” part. And I guess there is no particular meaning in “shi ei”. shi ei is cooler than “murasaki kage”.
