How To Roast Whole Chickens On The Charcoal Spit Rotisserie

- This whole charcoal chicken spit roast recipe is absolutely delicious. We will teach you how to roast the best juicy grilled charcoal chicken without an oven, instead using a souvla/ rotisserie! This BBQ chicken method we will be using is an absolute classic and and will remind you of your local takeaway charcoal chicken shop. Here in Australia it is one of our favourite take away food choices.
In this video we will begin by showing you how we prepare our favourite breadcrumbs recipe to make an amazing stuffing for our chickens. Here we use fresh continental bread, butter, salt, pepper and a mixture of fresh herbs. By following our stuffing recipe, you will add so much extra flavour to your chicken, trust us you will thank us for it.
Next, we go through exactly how we prepare our chicken salt or as some people refer to as the chicken rub. By combining a variety of herbs and spices we create a flavour that will rock your taste buds, we use this to marinade our chickens.
Following our rub, we then clean up the chickens. Here we remove any excess fat, unwanted feathers, or just anything that looks like it should be removed. Once this is complete, we then go ahead and evenly distribute the chicken salt marinade over our meat. Be sure to add the rub to the inside of the chicken as well. This helps to really go deep into the meat.
After salting the chickens, we then show you how we add our stuffing to them. After adding the stuffing, we guide you through putting all the chickens onto the spit and secure them ready to be placed onto the BBQ rotisserie.
Like always, once outside and ready to cook, we show you exactly how to light the charcoal and control the temperature. We want to make it as easy as possible for you to learn and follow along cooking at home on the grill, creating juicy food that everyone loves!
Grilling souvla style over the coals gives the food that tasty smokey charcoal flavour and it is a fantastic way to ensure juicy, tender and evenly cooked food. In this cook we had our chickens over the charcoal for 2 hours and 15 minutes.

Haha be careful they are always listening 🤣 Our small double prongs are actually from our uncles chicken shop. If your struggling you could always go to a commercial cooking store and they should be able to order you some! Happy cooking bro :)

Hey guys these rubs and stuffing is for 6 chickens. I’ll only be doing 1 for family of 4. Can I keep left over rub for next cook?
Hey Mathew, glad to see your trying the recipe. With the rub you can keep for next cook of course. With the stuffing maybe make only 1/2 of what we did. And with the extra, you can just eat it as a side. Heat it up a little again if need be, it will taste amazing still. Let us know how you go
