Launji,, wowww,, have had this every summer at my nanis house. Its a typical sabji in rajasthani house hold,, n what a receipe exactly how it's made.. Amazing.......
Was sitting with some raw mangoes which had gone a bit sweet trying to think what to do. And lo and behold here comes this recepie. Made it instantly.🎉🎉🎉 Awesome in taste .

In Odisha it is called "Aambo Khatta"... Khatta / Chutney is our staple in everyday lunch... But we don't use Garam Masala.. We use Panchaphuton Or panchphoron and mustard oil and red chili
Sharing up my mom's recipe of aam ki launji aka desi jam..... Oil Green cardamom Kacha aam Salt Red chilli powder Pinch of Turmeric Fennel seeds (corsed) Cumin (corsed) Kalonji Little amount of water.. Then cover with lid fir few minutes. Sugar &Jaggery(equal amount) Dry fruits(optional) ... Cook until it thickens.. It goes amazing with paratha,bread... ☺😋😋
Ranchi mei ise gurdaamba bolte hai...and we use pachforan and sukhi mirch without using garam masala and chaat masala...it's a delicious dish serve with pakhal bhaat or roti😋😋

We make similar dish minus the Garam Masala, Chaat Masala and add little Methi seeds in the tadka. In some Maharashtrian households it is called as Methamba. It's a wow substitute for Vegetables, sometimes to be had with Poli(Chapati) & Maharashtrian Doodh-Dahi Bhaat (Curd Rice).
Hmarae yaha issey "khatmithi "bolte hai. Or mere Ghar mein mummy bhut hi simple tarike se banti hai or bhut tasty lagta hai. We only add jeera or panchphoron, red chilli powder, dhaniya powder, haldi, jaggery, salt. Thats it
Like your recipe.... Gujrati mai amm ko boil kar lete hai fir suger ki chasni banakar us mai pani nikala huva boil amm dal re hai fir thoda thanda hote usme masale karte hai and app ne jo chok kiya vesa chok karte hai... Sir

Masale daar launji garmi ki sari recepies ke sath bht delicious lagti hai is ko bhi normal roti or parathe se kha sakte hain
