I think sifting flour started out as a way to get insects out and dry the flour but it also had the benefit of fluffing it up. Without modern processing equipment, flour is very moist.

I love your tutorials, I've always struggled with making tortillas but I would never blame a tutorial for any of my mistakes. I made mine along with your video, it took me 2 times to get it right but I got it!! Thank you so much for sharing ❤️ now I'll be working on making them a little more round because mine were not perfect circles lol

Great job. I have tried to explain to my New York (where I now live) friends, that in the Southwest the tortilla taste different and are way better than the store bought ones. We make them different sizes/thickness for what we are eating them with. Large thin burrito/burros, medium/regular thickness everyday meal or fajitas, smaller tacos, and so on. I make tortilla for them with lard and they love them.

I figured your a Texan. Both my grandmas were from Texas (Littlefield and Comanche).I was raised in Arizona, New Mexico, and Texas, I married an New Yorker and talk about a culture shock. Aw...sorry about your mother passing. I understand how our parents memories can live on through a home cooked meal. My father passed 2 years ago and with him went the best brisket I have ever tasted. I didn't really get a chance to learn how to smoke a brisket, but it won't stop me from trying...lol. Thanks for your support and best wishes! :)

TIP I have been making tortillas for quite some time and if you want to roll them beautifully round without having to stretch them, watch the Indian ladies' videos. They can roll a round chapati like no one else can! I learned my craft from them.
Guuurrrl!!!! The tortillas came out sooo good. My boys loved them, added some butter and ponle! Nice, fluffy, and soft. It's kind of relaxing having the 10 minutes to knead. 😆 I used lard too. 😄 made the tortillas for bean and cheese.

Made a bunch of tortillas and they stiffened up. Thought it was not enough fat. I think I over floured them; going to go back and try your method of keeping the dough sticky.
this recipe is excellent and i've made it following your other two videos several times. My husband is a fed ex worker and loves a good burrito or two in his lunchbox, and he says the storebought tortillas are dead to him after trying the ones I made using your tutorial. thank you!

Excited to try. Would you freeze the dough after it's rested 15 mins or go-ahead and freeze them after you cook them- separated by parchment? I am hoping to freeze the dough so i can make a bunch at a time and just thaw out what we need to flatten out and cook. I may just try it both ways- but just wondering if you have made them in bulk? We have 6 adults-so we'd need many batches of 6 for the burritos. Thanks, and I just subscribed!

Ivette, please make a video about how to use it. I bought one years ago, and never had much success with it. I'd always get "blowouts" where the bubbles would make mini-explosions in the tortilla. They still tasted great, but their shape wasn't usable for tacos/burritos. I'm appalled that tortillas at the store cost up to $0.30 each. And they don't even taste that good! I wish Taco Bell or Moe's would sell their tortillas... they have the best ones around.
If your tortillas aren't soft or don't puff up, first try sifting your flour and then gently adding it to the measuring cup with a spoon. No packing, no tapping the measuring cup. Level off with a knife. Second problem could be if the flour or the baking powder is old. They do expire and stop performing the way they should. Adding (strained) bacon grease as a portion of the fat can really add depth to the flavor, too.
They both look deliciosas, . Yep. I know about the tortillas with butter! Sometimes thats all we ate because we were full by the time dinner was ready!😍

Love that you use lard, it's all in the temperature you use it. Best pie crust cold hard lard, flaky. Soft tortillas warm lard.

I use a 1:4 ratio of shortening to flour.
1:2 ratio of hot water to flour.
Works for me everytime.
