Vietnamese Savory Sticky Rice - Xoi Man

  • Tips:
    Rehydrate your dried shrimp (tom kho) in hot water for at least an hour.
    Boil your Chinese Sausage in water to get it extra tender.
    Toppings:
    1 cup of diced Chinese Sausage
    1/2 cup of dried shrimp rehydrated
    1 cup of diced Vietnamese pork roll (Cha Lua)
    1 cup of chopped green onion
    1/4 cup of water
    2 tbl sugar
    3 tbl fish sauce
    1 tsp mushroom seasoning
    1/2 tsp black pepper
    Other ingredients:
    2 cups Sticky rice/sweet rice
    3-4 eggs
    1 shallot thinly sliced
    1. Start cooking your sticky rice in a rice cooker.
    2. In a pot sautéed thinly sliced shallots in little bit of oil. 3. One the shallots has brown add the chopped Chinese sausage, ham, and dried shrimp. Add water and let everything braised on low heat for about 15 mins.
    4. Then add the fish sauce, sugar, mushroom seasoning, black peppers. Stir fried everything on low-medium heat until the topping caramelized a bit from
    the sugar. Adjust taste to your liking.
    5. Add the green onions to the topping and stir fried for a few minutes so that the onion is no longer raw.
    6. Beat about 3-4 for eggs. Fry eggs into thin crepes and then julienned.
    7. One the sticky rice is cooked, transfer to bowl then add toppings and eggs to your liking.
    8. Enjoy!

    3 Chinese Sausage Links boiled then diced
    1 cup Cha Lua (Ham roll) diced
    1/2 cup dried shrimp rehydrated
    1 cup chopped green onions
    fried egg strips
    sticky rice
    1. To make the sweet & savory toppings start by sautéeing minced shallots with rehydrated dried shrimp and 1 tbl water until shrimp are tender.
    2. Next add diced Chinese sausage and diced cha lua.
    3. Season with 1/2 tbl fish sauce and 1 tsp sugar more or less to your liking. Add 1 tsp mushroom seasoning and 1/4 tsp black pepper. Sautéed all the ingredients on low-medium heat until are the ingredients soak in the seasoning.
    4. Add the chopped green onions and turn up the heat for like 5 mins so it will caramelized. Make sure you pay attention so you don’t burn it.
    5. Make fried egg strips and sticky rice.
    6. Add savory toppings to sticky rice plus the egg strip
