It would help to know how you processed them to freeze. If you froze them on trays, could you have moved them directly to the freeze dryer trays or did they need to be frozen longer in the bags? I haven’t freeze dried peaches before.
Hi Robin yes I actually prefreeze all my freeze dried things I often will purchase things when they’re on sale put them on my cookie sheets with parchment paper after I slice them and Dyson or whatever I’m doing. I’ve been pre-freeze once frozen I often put things in Ziploc bags, Place back in my freezer and then when I have trays available I just load up my trays.
Nice. Some suggestions: don't talk directly over your food unless you're gonna eat right away next buy extra trays and prefreez on them to save a lot of time.

No I did not blanch but I peeled. They all turned out great.

Do you put lemon juice on them to prevent browning or is that unnecessary?
I sometimes do, however I usually don’t.

Yes, I have two sets of trays. I get a huge amount of peaches, so I like to prefreeze and put away for another day.
