    CINNAMON ROLL RECIPE

    DOUGH
    1 1/2 Tbsp Active Dry Yeast
    1 1/2 Tbsp granulated sugar
    1/2 C warm water (but not too hot, between 110°f and 115°f).
    8 Tbsp butter, melted (then cooled to 110°fi-sh)
    3/4 cup warmed whole milk
    3/4 C granulated sugar
    1 large egg
    1 tsp salt
    4 C+ all purpose flour
    FILLING
    8 Tbsp softened butter
    3/4 C packed light brown sugar
    1/2 cup granulated sugar
    1 Tbsp ground cinnamon
    FROSTING
    8 oz cream cheese softened
    4 Tbsp butter, softened
    2 1/2 -3 cups powdered sugar
    1/2 tsp vanilla
    lightly stir the yeast, sugar and warm water together in the bottom of your mixing bowl
    let sit 5-10 mins (until double is size) to activate the yeast
    With the mixer on low add the milk, butter, sugar, egg and salt
    Add the flour 1 C at a time you want the dough to be slightly sticky - but just starting to pull away from the sides.
    Pour it into a greased bowl, cover with a damp towel and let rise, someplace warm, until doubled in size, about 60 mins.
    flour your counter top and pour the dough on to it, press it out into a rectangle then roll it out to about 15-26 inches or so. It will be about 1/4 inch thick and give you more swirls this way. You want it thin, that will give you more twists, about 1/4 inch thick
    cover the dough from edge to edge with the soft butter. Use it all, don't be stingy.
    mix the sugars and cinnamon and cover it entirely, again use it all, it will be thick.
    Starting at the shorter side start rolling up along the long side.
    using non flavored floss cut into 12 pieces
    line a 9x13 pan with parchment paper and place the pieces down
    let rise a second time until poofy - and almost completely filling the pan - about 60 mins
    Bake at 375 for 22-25 mins
    Beat the frosting ingredients together and spread over warm rolls
    VARIATIONS
    Caramel Pecan
    Add 1/4 C toasted pecans to the filling
    Pour into pan 1 1/2 C Caramel sauce - ashleemarie.com... and 1/4 C toasted pecans chopped
    after baking turn out onto a pan (only upside down rolls)
    Orange Roll
    Filling
    1 C Sugar
    2 Tbsp grated orange zest (Zester amzn.to/2fnGDky)
    Frosting
    Add - 1 1/2 Tbsp orange zest
    1/2 Tbsp orange juice
    Pumpkin Maple
    Add 2/3 C Pumpkin to the wet ingredients
    Add 1/2 tsp cinnamon and 1/4 tsp nutmeg to the dry
    Use a little more flour
    Frosting
    use - 1/2 tsp vanilla
    1/2 tsp mapline extract amzn.to/2ePrtE5
    Chocolate
    add 1/3 C cocoa to the dough
    use less flour
    Filling
    3/4 C packed light brown sugar
    1/2 cup granulated sugar
    1 Tbsp ground cinnamon
    3 tbsp cocoa
    1/2 C mini chocolate chips
    Frosting
    add 6 Tbsp cocoa or 1/3 C melted/cooled chocolate

      totally! I talk about it in the video actually - I usually do the first rise, roll out the dough, fill them, roll then up, cut them THEN cover it and put it in the fridge, they will still rise but slowly - the next day pull them out, preheat the oven and bake ! they should be fully risen by then (or at least after thawing out a bit)

      seriously YUM! I would wait until they are cooler to ice with the marshmallow frosting - it's basically a meringue and won't "melt" the same way the cream cheese frosting does.

    To compensate for the lack of pumpkin flavor add pumpkin pie spice and I can't remember if you added it, but brown sugar makes pumpkin taste a world better!!! I made bomb pumpkin bread, best thing ever!

    Now you've got me thinking. Chocolate with raspberry or cherry filling (maybe like a Black Forest cherry cake) or chocolate with coffee flavoured icing or peanut butter flavoured roll with chocolate flavoured icing or chocolate banana. I cant wait to experiment. Thank you for opening up my imagination. I never thought of experimenting with this.

      +Ashlee Marie Cakes Amen to the German Chocolate Fosting!! I think we may be twins separated at birth lol. Here's a twist my bent mind took. How about savoury rolls. Ham, cheese and garlic butter rolled in the bun with cream cheese and green onion frosting or a chicken alfredo sauce in the roll with cream cheese and dill frosting? I think savoury would be awesome with the bit of sweetness in the dough. A great way to use up left overs? It would almost be like a Hawaiian roll. Oh, how about a tropical roll with pineapple and toasted coconut. It's 3am here and I can't sleep because your video has my mind racing with different combinations lol. Love ya Ashlee!

      HA! I think the tropical roll wold be great, I use left over pizza dough for my savour roll ups. Not sure how these light and fluffy rolls would work with the heavy savory ingredients, but if you try it let me know!

      +Ashlee Marie Cakes So I made a few different types of savoury rolls and took them to a church get together tonight and they were a hit! Not one left. I rolled mine the opposite direction so that there were less spirals as I wasn't sure if they would hold together the other way even though your way is prettier. First batch was a ham and cheddar. I put a thin single layer of shaved ham and a layer of shredded cheddar cheese then rolled and baked. Second batch was candied bacon and cheddar cheese. I lightly brushed melted garlic butter on the dough, sprinkled a fine layer each of candied bacon and shredded cheddar cheese then rolled and baked. Third batch was cheddar and apple. I peeled and sliced a Granny Smith apple paper thin on a mandolin. I put down a layer of shredded cheddar cheese then a thin layer of apple then rolled and baked. All three turned out really well. The families in our church like trying out new recipes on each other at our get togethers and everyone gets to anonymously vote using a scale from 1 - 10. The lowest score (only one) was an 8 out of 10. The rest were 9 and ten. Your dough recipe is gorgeous. Only one I will use from now on for making cinnamon rolls etc. I can't wait to experiment some more. Thank you so much for sharing another fantastic recipe. Please keep them coming.

    I want to try this but I’m concerned the amount of yeast is way too much. I read it as Tbsp. I think it should be tsp. I find similar recipes say 1 packet of yeast which is 2.5 teaspoons. Can you set me straight? Thanks.

      Nope one tablespoon is correct!(3 teaspoons is a tablespoon so they are very similar amounts)

    I made assorted fudges for presents last year. I'm totally bummed I hadn't found you yet... I'm excited to try your recipes out (they sound much better than the ones i used!). I also found your elevation comments very useful.... it caused me to research further on using my thermometer (I've struggled with it in the past).
    Btw... I loved your "mom look" and how you opened your mouth to talk to the kids making noise in the background. I'm sure I look the same way... only mine is "Shhh.. I'm on the phone!" You're very relatable (though I couldn't rock blue hair with quite the same panache)... and you're doing an awesome job raising your kids and doing what you love. It shows.

    O.M.G. absolutely love this video! You can really shows that you love what you do AND teaching others how to do it as well.
    I was wondering if you've tried making a Red Velvet (cinnamon or other) roll; I happened upon a video that used Red Velvet cake mix, then looked like she added it to a basic dough. Something I may try, though was just lil thrown by the cake mix part.
    BTW, you have a beautiful family!
    Now off to get some C'Rolls ready to bake in the morning!

      Thank you so much! I don't use cake mixes so I'm not sure how that recipe would turn out but it is worth a try, and if it doesn't work the way you wanted I would suggest trying a red velvet from scratch:)

    My mom has a Stollen recipe(something similar to cinnamon rolls, sort of/not really) where the dough raises overnight in the fridge. Is that for time management, or flavor?

      management time MOST of the time - the fridge slows down the yeast - BUT for some dough that stage of getting firm is important - it's not for cinnmaon rolls, but is for the liege waffles -

      you just don't have to proof the yeast, just mix in when you mix in the other powders - and make sure to let it double in size no matter how long it takes

      make sure you don't add too much flour - that's really where the biggest difference comes in- it's hard to work with the dough so sticky - but worth it in the end

    I love the way you explain everything...makes it so easy to alter your dough when you understand what you're doing to it by adding wet/dry ingredients...you're a great teacher and it's much appreciated...I make some great cinnamon rolls but I'm definitely gonna try some of your variations 😊🎃🍫🍊

      Sorry, 90% of my audience is american - so I use Cups and Tbsp. But personally I just google "milliliters/grams to cups" when I am trying a recipe from anywhere else

      that's weird? the music and audio are on the same track with the audio very quite compared to the voice. I tested it on firefox, chrome and mobile and they all worked fine for me!
