It is so easy, but also makes for some really cute chocolate bonbons. Using good quality edible lusters dusts like gold and silver, this decoration is easy to make any plain bonbon look super festive really quick. Enjoy!

    They came out so so beautiful...WOW...i gotta try this...thank you so much...have everything except airbrush, for now will do as i always did, hand painted...all i need is the filling recipe..will look for it..have a beautiful week-end..You ROCK mademoiselle...stamp is the pine tree and snow flake..since i have bunch of the two on my land, mostly bunch of snow flakes, hahaha

    This is really helpful! I use TMP nontoxic metallic luster dusts.. They are bright and beautiful, including the silver. They also have a copper color which is pretty spectacular.
    Especially appreciate the suggestion to get the acrylic stamp block because you can see through it. I’m not sure I ever would’ve thought of that!

      Of course!! I'm glad you liked the video! So I think the TMP might be nontoxic but not edible FYI. I feel like using nontoxic gold for such a small area and amount like a bonbon stamp wouldn't bother me. I mostly get freaked out with non edible lusters when people are painting full sugar cookies or cakes with it and expecting people to eat. Sorry for going on about this, I went on a whole hunt for edible dusts so I am passionate about the topic LOL

    Could you put the stamps on a rounded dowel rod and stamp directly in the mold? Or would the airbrush smudge the dust?
    or could you stamp with cocoa butter?

      When you add luster to the mold first it just doesn't stick the same, it isn't as vibrant, sometimes you can't see it at all really. You definitely could try it with cocoa butter but it may be hard to get a clean image because it's easy to accidentally get too much or too little with cocoa butter. I find this works best! : )

    The one thing that I haven't seen addressed yet is how to box these gifts. I haven't tried these yet, but Brittnee makes everything seem a bit easier, especially when we can see that even she has issues during the process sometimes. Nothing too big to solve though. Thank you Brittnee, I'll keep watching as I try to make a career out of chocolate.

    I can't believe how perfect the red and green are. Just right! I'm wondering if the Luster Dust stamped designs brush right off or smear if they get touched. That's something I was thinking about when considering it for a technique for gift chocolates.

      Thank you! Yeah I lucked out with these colors, they are soooo festive I love them! Yes they definitely will smear! That's just the sad truth of luster dust. But I don't mind it because as soon as you pick them up as a customer you are going to eat them so I think it's ok if it smears at that point. And as the chocolatier, you should be avoiding touching or smearing the chocolates before they get to the customer anyway, so I haven't found it to be a problem! 🤩

    Brittnee, you make it look so easy. I have never made chocolate before, but I will give it a try. Have you ever thought of doing the planets in the universe? It would be interesting to see how you go about that.

    I think I'm going to do a comparison with Dazzle Dust and the metallic/pearl dusts I purchase from Colour My Chocolate. I haven't found any better yet, so I'm curious how they compare.

    Just watched this again and I am not seeing the link for airbrush that you mentioned. Could you resend? I'm going to try to make a St Patricks day bon bon, green w/ - you guessed it a four leaf clover stamp (if I can find the stamp) filled with, you guessed it, irish cream ganache. I think I can hand paint it but guessing air brush would work better. Thank you very much. Oh, and i have this idea for a spring bon bon, maybe white (snow) with green grass shoots or other spring flowers poking through so if you have any tips on pullingthat off i'm all ears and eyes. thanks for all you do.

      And it’s will be as shiny as that ? I experienced that putting coloured cacao butter on top bonbon chocolate turns not shiny …

      No it won't be shiny if you put it on top. But that doesn't have to be a bad thing, the different textures could potentially look really cool!@@lumiereespoir9523

      Yep! You have to be careful when handling 🙂 which you already do to keep the chocolate shiny and nice so to me it isn’t a big deal or much different 🤩

      By the way your first phase of gold stamping as opposed to the others was much more appealing and less challenging but very pretty. When you compared the different ways of stamping it was clear to me what I would use when I try to duplicate your art work…lol. Great job.

    looking so good, i heard you talking about tempering by seed. am new to chocolate making. whats the minimum quantity does one need to do the seeding method as a beginner

      You technically can do seeding with any amount of chocolate. Larger quantities can be a bit easier. You will use 20% of the total amount of chocolate for the seeds

      It will smear if you wipe it! But you should be handling all bonbons with care anyway to prevent fingerprints!

    Unfortunately, it is not possible to buy the same model as yours in Belgium. Do you have a model of compressor and gun that would be of good quality and that I could also find on Amazon Belgium.

      I am not that familiar with other brands as I have only used this one! I imagine if you pick a moderately priced airbrush that’s the same size (.7mm) gravity fed and a small compressor that goes to 80psi you will be all set!

    I have a question about this one tho.
    I really wanted to try stamping technique for Christmas and bought acrílic stamp holder and the silicon stamps, but with my dust(basic one) it didn’t work…
    Also didn’t go with oil based or water based colors. Any ideas what to use? May be some eatable ink?

      Yes, that is what I warned about in the video...if you're luster dust isn't more on the shiny end and less on the sparkly/powdery side it won't work as well.
      You can try stamping also with tempered cocoa butter, just know that it won't end up shiny!
      My best advice if you're interested in this technique is to try out different edible lusters and find one that works. The one I use in this video works amazing!

      Oh darn! I know, I wish I knew a bigger brand that had amazing edible dusts, but this is the best I have found. You may have to do some hunting for a good gold near you! 💚But I think also using cocoa butters could be really fun, let me know how it goes for you if you try it! 😃@@Kata_patata

      @@BrittneeKay Well as Im new to this I have also huge problems with cocoa butter. It’s not setting as it should, the colors are bland - the usual problems. It’s been improving slowly. BUT!
      I think I found a good dust in EU. Yesterday I bought like every possible option and the winner is from Soc chef, gold color, color oro. I’m located in Barcelona so I hope it’ll help someone. It doesn’t work AS good. But it works more or less, requires a bit of learning your way with it

    I'm sorry... Mispronouncing of foreign words is a major pet peeve of mine (could be due to my parents being immigrants? 🤷🏽‍♀️), but Callebaut is pronounced Calle-bow.

      haha I can see how it is annoying...but let's be honest, none of us pronounce every word correctly. Mispronouncing words is something I am super careful about actually, especially because I'm putting myself out there online. 😂 You just can't win though, people will pick you apart for every little thing.
      Anyway, if you actually hop onto Callebaut's UA-cam channel you will see that they pronounce it like I do. I went straight to the source because I wanted to be as accurate as possible. I choose to pronounce it like Kirsten Tibballs, who is a Callebaut ambassador, so I figured she knows what she's doing. 🙂
