Interesting that the people supplying the Military Ready to Eat meal kits (MRE's) are going more and more to freeze-drying. They last, as you said, a considerably longer shelf-life time, and when reconstituted with water, they bring back good taste and nutrition under battlefield conditions.

@@acresofclayhomestead I sliced them and did a single layer. We parboiled the potatoes. Once the water came to a boil we timed them for 4 minutes then run over cold water. Dried them off w paper towels and I lined the trays with parchment paper. I recently bought mesh that is used for a dehydrator and I'll be able to layer them on the trays. I hope this helps. I also made Augratin potatoes out of them. I soaked them for about 30 minutes in a bowl of water and then used as normal. They tasted great. We couldn't tell a difference. 🙂

good freez & dried food & it's machine but as i understand once the food is freezed & dried it should be packed under sterile condition otherwise microorganism grow & contaminate the food #❤️

Sealed jars or mylar bags are the best for long term. I use both. Mylar bags are easier to store though.
