Betty's Cooling Cucumber-Mint Lemonade

Betty demonstrates how to make refreshing Cucumber-Mint Lemonade. This is a great drink for a lazy summer day. It has a wonderful combination of flavors-cucumber, mint, and lemon, sweetened with honey.
Cucumber-Mint Lemonade
1 medium cucumber, peeled, seeded, and coarsely chopped
3 tablespoons freshly-chopped mint leaves
1 cup lemon juice, chilled
½ cup honey
pinch of salt
cold water
ice cubes
cucumber slices and sprigs of mint, for garnish
Place cucumber and mint in blender and pulse until finely chopped. Add lemon juice, honey, and a pinch of salt and blend until smooth, leaving some flecks of green. Pour mixture through a sieve into a bowl or large measuring cup. Use a spoon to press as much liquid as possible through the sieve. Discard the cucumber/mint pulp. Add enough water to the strained liquid to equal a total of 8 cups (1/2 gallon). Pour into two large pitchers for serving. To serve, place ice cubes in a tall glass. Pour Cucumber-Mint Lemonade over ice cubes. Garnish the top of the glass with one slice of cucumber and a sprig of mint. Enjoy! --Betty
