CHEESECAKE FACTORY COPYCAT Cucumber Mint LEMONADE!! MUST TRY at Home Recipe!/ Paulette’s Eat’s

Cheesecake Factory Cucumber Mint Lemonade:
Simple Syrup:
1 1/2 cups sugar
1 1/2 cups water
3-4 fresh mint sprigs
1 1/2 cups fresh cucumber juice from 3-4 cucumbers
1 1/2 cups fresh squeezed lemon juice from about 10-12 lemons
5 1/2 cups cold water
For the syrup:
In a medium pot combine sugar, water, mint sprigs and bring to a soft boil. Mix until sugar is completely dissolved, take off heat and let steep for 10 minutes, then discard mint sprigs.
To do the cucumber juice, add some of the peeled and sliced cucumbers to a blender with just a splash of water and blend until puréed, then Add in the rest of the peeled and sliced cucumbers until they are all puréed. Add to a sieve or cheese cloth to filter out any pulp.
In a large Pitcher, add lemon juice, cucumber juice, mint simple syrup, water and stir together.
You can garnish with more mint, lemon slices and cucumber slices!
Keep refrigerated.
