I didn't really understand, you said about evaporation of water, but as far as i know that Water of hot temperature decreases its temperature, and go down against direction of air flow and reserved in a tank. Some water mixes with air and make air more humid.

For a standard air conditioning unit, is it because the compressor adds heat to the fluid bringing it above the outside air temp. For a cooling tower, it's because water evaporation is taking place.

No, the cooling tower cools down the hot water by letting some of the water evaporate which cools down the surrounding water molecules. This cooled water is then used in the condenser to condense the steam from the turbine.
