  • Rice and prawns cooked with spicy green masala paste.
    GREEN PRAWN PULAO
    Ingredients
    1 cup medium prawns, peeled and deveined
    1½ cups basmati rice, soaked for 15-20 minutes and drained
    ¼ small bunch fresh coriander leaves
    2 green chillies
    5-6 garlic cloves
    1 inch ginger
    1 medium onion, sliced
    2 tablespoons ghee
    4-5 cloves
    3-4 green cardamoms
    5-6 black peppercorns
    1 inch cinnamon
    1 bay leaf
    Salt to taste
    ¼ teaspoon turmeric powder
    ¾ cup coconut milk
    Juice of ½ lemon
    Fresh coriander sprigs for garnishing
    Lemon wedges for garnishing
    Method
    1. To prepare green paste, blend together coriander leaves, broken green chillies, garlic cloves and ginger alongwith 2-3 tablespoons water into a smooth paste.
    2. Heat ghee in a deep non-stick pan. Add cloves, green cardamoms, peppercorns, cinnamon and bay leaf and sauté till fragrant.
    3. Add onion and salt and sauté till onion turns golden brown. Add the green paste and sauté for 2 minutes or till the ghee separates.
    4. Add turmeric powder and prawns and mix. Add rice and salt and mix. Add 2 cups water and mix well.
    5. Add coconut milk mix, cover and cook on medium heat for 8-10 minutes. Switch off heat, add lemon juice and mix well.
    6. Serve hot garnished with coriander sprigs and lemon wedges.

    Green prawn pulao cooked by my mum is my most favourite recipe. However, it definitely cannot be made in 15 mins 😂. Cleaning of the prawns and the coconut milk preparation takes a lot of time. We use the smaller prawns which are way more tastier than the jumbo or tiger ones.
