Easy Peasy Pasta: Rotini, Peas, Pancetta & Mint (e86)

  • Buon giorno a tutti. In this episode, Nonna Mia, la nonna di tutti - (everybody's grandma), shares a quick and easy pasta & peas dish; a twist on the traditional 'pasta e piselli'.
    On account of a fresh peas find at the Farmer's Market, she was inspired to make this dish. If you don't have fresh peas, just substitute frozen peas.
    To make this dish, you will need:
    - 1 pound of short-cut pasta (your choice)
    - 2 cups of peas (fresh or frozen)
    - 1/3 pound of pancetta, cut into strips (use bacon if pancetta unavailable)
    - a handful of mint leaves
    - 1 onion, diced
    - 1/8 cup extra virgin olive oil (EVOO) for sautéing
    - 1/4 wedge of lemon
    - 1/4 cup grated parmesan cheese (Nonna uses Grana Padana today) & more of sprinkling once plated
    Place a pot of well-salted water on the boil. Once boiling, add a pound of pasta of your choice. Nonna selects Rotini, but choose whatever you prefer, ideally a short-cut pasta. Since the peas are fresh, she adds them to the boiling water at the same time as the pasta. If you are using frozen peas, you will only need to add them a few minutes before you pull the pasta.
    While the pasta and peas are boiling, Nonna prepares a pot with 1/8 cup of EVOO and adds a large onion (diced) and 1/3 pound of pancetta, cut into strips. If you cannot find pancetta, substitute it with bacon. On medium heat, she slowly pulls the fat our of the pancetta but retains the oil, as it flavours the pasta nicely. She cooks that for about 6-8 minutes at which point the pasta is just about ready. You want to pull the pasta a couple of minutes early, so it can continue to cook together with the pancetta/onion mixture.
    Nonna fishes out the pasta and peas, and adds it to the pancetta and onions. She next adds about a cup of pasta water. Precisely how much you add varies on your taste - if you prefer a wetter pasta, add more. She next stirs in a handful of chopped mint leaves and with the heat now off, she then squeezes in the juice of a 1/4 wedge of lemon and sprinkles in 1/4 cup of grated cheese. Nonna uses Grana Padana today.
    Plate, and sprinkle more grated cheese and enjoy!
