Doing it manually adds the secret ingredient, forehead and arm sweat, it drips right into the big bowl, i worked in a bakery, half my town ate aweat flavoured bread, now it's all automated luckily

Truly amazing the amount of time and care put into these dumplings! I was surprised by the (*spoiler alert*) cheese at the end - I was trying to guess at the ingredients as we went along with the recipe but I have to say that kimchi, rice, and green onion were all that I could be sure of....
@gakki bear I rewatched it a few times, and there’s definitely a lot going on. Some are too fine to see what they are. But I’m only able to identify the meat in the beginning is ground pork, then the white ish meat is ground cooked turkey or chicken. They add lots of garlic, korean onion, asian chives, shredded fluffy bread into breadcrumbs. That darken paste in beginning is also mixture of lots of black pepper, salt or no salt but rather used soy sauce, bouillon, garlic / onion powder. It’s hard to decipher in general. But the two red powders in the containers are red pepper powder (fine) and the other is red pepper flakes (coarse).
I can't just get over a fact of how easy and time efficient it would be for a machine to carve perfect circles into the dough, without the need for a human to do it
@Ged Casinillo To be fair, they can just use hand-operated cutters for that. Save themselves a lot of trouble and time and the effect would be identical or maybe even better. It's just ever so strange that they use automatic dough rollers to prepare the dough but the next minute you see a guy spending a good few minutes trying to carve out a circle out of it, by hand, with a knife
I'm torn between watching the beautiful & hypnotic (almost therapeutic) repetitive motions and focusing on the waste... which I hope is actually re-purposed... and of course hunger... damn those look good.
It seems nice and all, but you'd be doing stuff like this all the time, every day. The magic would probably wear off pretty quickly, no matter how much you think you love the idea of it.
I have a newfound appreciation for how lucky we are to be able to buy the dumpling skins at markets. I like how the dumplings are shaped like mega tortellinis :)
When I make mine...I don't make them like this... I take wheat flour, add some boiling water, let it sit for a bit, then I add flour & cold water until I have the desired amount of dough, in a consistency of modeling clay. Then I break off small half inch balls, & dust them with Tapioca flour before rolling them out with a rolling pin on a surface with some spare tapioca flour. I prep the filling ahead of time, & form it into the shape that I need for the dumplings, then freeze it. It makes wapping the dumplings 100% easier because the filling doesn't squish around as you're trying to wrap it. It does require a bit more cooking time though because the freezing aspect needs to be accounted for, but it definitely makes it easier. This is my take after making 100 of them.😂 I abandoned the original dumpling wrappers recipe just because that's what I do after trying out a recipe as written.😂 Not to mention that there are apparently many ways to make it.🤔 Mine works for me only because I like just throwing things together and having them work...only time that fails me is in my own preferences, I have rarely made something that was completely inedible, or unpalatable to someone else.😂

I also use the same to make siomai. I just use different wraps. Here's how I usually make mine. Ground beef/pork Carrots (I use a blender.) Garlic Spring onions or leeks Salt Ground black Pepper I add eggs to make it hold together. I also add oyster sauce and sesame oil.
